(Hopefully) free dining and a possible travel companion

I'm hoping to snag free dining for a solo trip I'm planning for September 2017. My plan was to go solo but last night a girlfriend mentioned that she'd like to possibly come with me.

If I book a room with free dining (if it's offered) for the two of us and she flakes out, will I be able to remove the extra guest and keep my reservation? I'm worried that I will book for the two of us, she will change her mind and I will have to dump the whole reservation and miss out on the promotion for myself.
 
Yes as long as you are the lead on the reservation. If it's close to arrival you may get charged a change fee since the cost will decrease. We called about that very situation happening with our free dining reservation.
 

I booked a bounceback free dining package. I am not sure if my mother will be joining us so I asked some extra questions to clarify. My TA assured us that as long as we were not changing rooms, going to be over capacity, or wanting to change our discount, there would be no issues adding another person and recommended we leave her off the reservation until we know more.
