My package went out today! I have a funny story about mailing it out, but I will wait until the exchange is over to tell it. If I tell it now I will give away the location I mailed to! Lets just say it took an actual village to get it in the mail!

Italian Sausage Soup

Amount Measure Ingredient -- Preparation Method

2 large onions -- chopped
2 cloves garlic -- minced
5 cups beef broth
1 pound Italian sausage
1 1/2 cups dry red wine
28 ounces Italian-style tomatoes -- broken up
1 tablespoon basil
1 tablespoon sugar
1 medium green pepper -- seeded and chopped
2 medium zucchini -- sliced 1/4" thick
2 cups dry bow tie pasta -- 1 1/2" size
1/2 cup parsley -- chopped
salt and pepper

In a 5-6 quart pan, combine onions, garlic and 1 cup broth. Boil on high heat, stirring occasionally, until liquid evaporates and vegetables start to brown, 10-14 minutes. To deglaze, stir in 3 tablespoons water to release browned bits.
Cook, uncovered until liquid evaporates and mixture begins to brown again, about 1 minute. Repeat deglazing step 3 more times until mixture is richly browned. Add sausage and 1/2 cup more water. Stir gently until liquid evaporates and meat begins to brown, 8-10 minutes.
Add remaining 4 cups broth. Stir to loosen browned bits., then add wine, tomatoes and their liquid, basil, sugar, green pepper, zucchini and pasta.
Cover and bring to boil over high heat. Simmer until pasta is just tender to bite, about 15 minutes.
Serve hot, with parsley, salt and pepper.
(If made ahead, let cool, then cover and chill up until the next day. Reheat to simmering).

Mine is ready to ship on Tuesday. BTW Nancy, I have made that Italian Sausage soup many times and it is one of DH's favorites. Great with cheesy garlic bread.

Cranberry Salad

2 cups cranberries -- ground
1 cup sugar
10 ounces miniature marshmallows
quart Cool Whip -- thawed
small can crushed pineapple -- drained

Mix cranberries and sugar. Let stand 2 hours.
Mix marshmallows and Cool Whip. Let stand 2 hours.
Mix cranberries and marshmallow mixtures together with pineapple. Set overnight.

I'm sitting here printing out my recipes, and thought I'd share some!

Another easy dessert, this one's been a family favorite for a long time. In fact, the first time one of my future brothers-in-law came for dinner, I served this for dessert (mom was the dinner cook, I was in charge of dessert since I was 10--I've always loved to bake). And every time he came for dinner after that, he requested it, and I've made it for him as a birthday dessert!

What You Need

2 env. DREAM WHIP Whipped Topping Mix
2-3/4 cups cold milk, divided
1 tsp. vanilla
2 pkg. (3.9 oz. each) JELL-O Chocolate Instant Pudding
1 baked pastry shell (9 inch), cooled
Make It

BEAT whipped topping mix, 1 cup milk and vanilla in large bowl with mixer on high speed 6 min. or until soft peaks form.
ADD remaining milk and dry pudding mixes. Beat on low speed until well blended. Beat on high speed 2 min., stopping occasionally to scrape bottom and side of bowl. Spoon into shell.
REFRIGERATE 4 hours.

Easy Coconut Dream Pie
Stir 1 cup toasted BAKER'S ANGEL FLAKE Coconut and 1/2 cup chopped PLANTERS Pecans into pudding mixture before spooning into pastry shell.
Praline Dream Pie
Melt 1/3 cup butter or margarine in small saucepan. Add 1/2 cup chopped PLANTERS Pecans and 1/3 cup packed brown sugar; bring to boil. Boil 30 sec., stirring constantly. Spread onto bottom of empty pastry shell before filling with remaining ingredients as directed.
Special Extra
If using JELL-O Chocolate, Chocolate Fudge or Pistachio Instant Pudding, add 1/2 tsp. almond extract, 1/2 tsp. peppermint extract or 1 Tbsp. MAXWELL HOUSE Instant Coffee to the whipped topping mixture with the milk and pudding mixes.

Love this dessert, I use to make it all the time but haven't made it in a while I'll have to put it together over the holidays. Thanks for posting it.

This isn't a tried & true recipe (made it for the first time on Saturday), but it was really good, and really easy. My 10 yr old niece & my dad loved it.

Minestrone

2 tablespoons oil
1 medium onion, diced
2 medium carrots, diced
1 celery stalk, diced
2 medium zucchini, diced
1 garlic clove, minced
3 medium potatoes (about ¾ lb.), peeled & diced
2 (15 ½ oz.) cans cannelloni beans, drained
1 (14 ½ oz.) can diced tomatoes, undrained
2 (14 oz.) cans low sodium chicken broth
3 cups water
½ tsp. dried rosemary
½ tsp. salt
½ tsp. pepper



1. Heat oil in large stockpot over medium heat. Add onion; cook, stirring occasionally, 6 minutes or until softened. Add carrots & celery; cook, stirring occasionally. 3 minutes. Add remaining ingredients. Cover & bring to a boil; reduce heat & simmer gently 1 to 2 hours.
