Cinnamon Sugar Butter Cookies

Serving Size : 36 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method

Topping
3 tablespoons sugar
1 tablespoon ground cinnamon
Cookies
2 1/2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup packed dark brown sugar
1/2 cup sugar
1 cup unsalted butter -- softened
2 large eggs
2 teaspoons pure vanilla extract

Preheat oven to 300 degrees.
In a small bowl combine sugar and cinnamon for topping. Set aside.
In a medium bowl combine flour, soda and salt. Mix well with a wire whisk and set aside.
In a large bowl blend sugars with an electric mixer set on medium speed.
Add butter, and mix to form a grainy paste. Scrape sides of bowl, then add eggs and vanilla. Mix at medium speed until light and fluffy.
Add flour mixture and blend at low speed just until blended. Do not overmix.
Shape dough into 1" balls and roll each ball in cinnamon-sugar topping.
Place on ungreased cookie sheets, 2 " apart.
Bake for 18-20 minutes. Immediately transfer cookies with a spatula to a cool, flat surface.

It should be lots of fun. The girls & I have lots of plans. Tomorrow, mom is dropping them off at school, but I'll be picking them up. We have some arts & crafts projects we want to do. Then we'll make macaroni & cheese for dinner. Then we're going to watch Harry Potter 1 DVD. Saturday the 6 yr old has soccer, but after she's home, we're hoping to get outside so they can ride their bikes & we can play some basketball. Grandpa is coming for lunch on Saturday, we're going to make pizza. (frozen dough, my sauce & lots of cheese!), then we're going to take him out to dinner at Friendly's, which is a great burger/fried chicken/sandwich & ice cream restaurant. (the girls picked it, but grandpa & I love it too!). I'll be going home sometime Sunday. We've done this the last few years, it's always great fun for us. We're trying to talk mom & dad to go away for more than a weekend, maybe sometime soon!

you did get it today. I figure you can never have to many scrapers and you wouldn't believe how many people don't have funnels, I use my funnel a lot. Am I right to assume the mug made it in one piece? cause if not I will mail another.

The peanut butter cup recipe, tastes just like the peanut butter bars we got in school, they were so good.

Thanks, Nancy! I'm getting so excited--I'm always worse than the kids.

Trying to pack, getting ticked at DH for saying I can't use the big suitcase. Normal gril stuff--you pack for 5 people...they just show up.

I just keep telling myself "there's a great big beautiful tomorrow..." and it includes me having a margarita in EPCOT.

Hi Everyone! I mailed my package out today! Yee Haw! I hope it gets to its destination safely, as it has a long, long way to go... I have to tell you, I almost did something very stupid. I had everything all packed in the box the way I wanted, and was about to tape it all up, when I suddenly remembered...I hadn't put the recipes in the box!!! Duh! I would've felt really foolish if I had forgotten that!

Just printed my label, it will go in the big blue box tomorrow (Friday), when I drop it off on my way to Disneyland!! If anything comes to me Friday or Saturday, my DH will be home, but I won't know until I get home Sunday night.
