Crunchy Pecan Pumpkin Custard

Amount Measure Ingredient -- Preparation Method

3 eggs
16 ounces canned pumpkin
12 ounces evaporated milk
3/4 cup packed brown sugar
1 teaspoon pumpkin pie spice
1 teaspoon vanilla
1/4 teaspoon orange peel -- finely shredded
4 ounces Cool Whip -- thawed
1/4 cup packed brown sugar
2 tablespoons flour
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons butter
1/2 cup pecans -- coarsely chopped

In a medium mixing bowl beat eggs lightly with rotary beater or whisk.
Stir in pumpkin, milk, 3/4 cup brown sugar, pumpkin pie spice, vanilla and 1/4 tsp. orange peel.
Fold in container of whipped topping.
Pour pumpkin mixture into 12 -6 oz. custard cups or one 2 quart square baking dish.
Bake at 350 degrees until sides just start to set, allowing 20 minutes for cups and 45 minutes for dish.
Meanwhile, for topping: In a small mixing bowl combine 1/4 cup brown sugar, flour, cinnamon and nutmeg. Cut in butter until mixture resembles coarse crumbs. Stir in pecans. Set aside.
Sprinkle custards with topping.
Bake 10-15 minutes more or until knife inserted near center comes out clean. Serve warm.

I'm going to have to sit down over the weekend and really go through this thread to copy recipes onto a file at home. I printed out the sausage soup recipe this morning, but now they are all just sounding way too good.
 
I'm glad you got your package. Sounds like you had a busy week - I was worried that even though it was delivered, you didn't get it.

I got a package waiting on my doorstep this morning. Our UPS person never rings the doorbell :( Thank you Jessica(jwsqrdplus2) for the great box. I got:

Turkey Hand soap dispinser
Snowmen Salt & Pepper shaker

Baked Chocolate Covered Cherries

Amount Measure Ingredient -- Preparation Method

2 cups flour
1/2 teaspoon salt
1 cup butter -- softened
1/2 cup sifted powdered sugar
2 teaspoons vanilla
1 cup oatmeal
36 maraschino cherries -- drained
6 ounces melted semi-sweet chocolate chips

Preheat oven to 350º.
Sift flour and salt together. Beat the butter, sugar and vanilla until creamy. Add the flour mixture and mix well.
Mix in the oats. Dough will be stiff.
Shape 1 tablespoon dough around each cherry. Place on an ungreased cookie sheet, 2 inches apart.
Bake about 25 minutes or until golden. Cool. Dip the tops in melted chocolate.

Glad it made it! I was beginning to worry a little. Our UPS person rings the doorbell, but is halfway down the street by the time you get to the door!

Do we have the same UPS person? Ours doesn't ring the bell, just leaves those stupid notices on the door. So I left a note back the other day telling him to try ringing the doorbell or actually coming in the door since there are 4 apartments and then he could actually walk up the stairs and knock on the door.
 
Hmmm.....all the rest really should have arrived. It has been long enough.
Guess they are sight-seeing along the way :(

My UPS man doesn't ring either. But I can usually hear him drive up. He always talks to the kitties when they are sleeping in the window seat. :cat:
