Potato Leek Soup in Bread Bowls

Amount Measure Ingredient -- Preparation Method

4 round loaves of white or sourdough bread -- unsliced
2 cloves garlic -- peeled and crushed
4 tablespoons olive oil
The Soup
2 large potatoes -- peeled and diced
2 large leeks -- thinly sliced
4 cups chicken broth
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup heavy cream
dash grated nutmeg
1 tablespoon dried parsley flakes

Cut tops form bread about 3/4" thick to make "lids". Using a sharp knife, cut around inside of loaf leaving 3/4" edge for the "bowl". Hollow out the center. (Reserve removed bread to make croutons, breadcrumbs, etc.) Rub the inside of the bread bowls and "lids" with garlic and brush with olive oil.
Bake lids and bowls on cookie sheet at 350 degrees until slightly toasted. Serve soup in bowls.

In large pot, combine potatoes, leeks, chicken broth, salt and pepper. Bring to a boil. Reduce heat to low. Cover and simmer 15-20 minutes or until vegetables are tender.
Strain soup into another pan. Place cooked potatoes and leeks in blender or food processor with about 1/4 cup broth and process until smooth. Return to pan. Stir in cream and nutmeg.
Spoon into hot prepared bread bowls. Sprinkle with parsley.

Just got in from school to find a package waiting for me! Yay! Twigs (Joyce) sent me a big hamburger spatula, three piece mini strainer set, two white melamine spoons with a vegetable/flower design and a matching melamine covered square dish. The recipes were in a cute little blue binder, all organized with a cover page too that says Recipes from the DIS -- love it! Now I have an organized place to add all of the recipes Nancy (Meriweather) keeps posting and I keep printing!

She sent recipes for:
Deviled Ham Dip
Baked Stuffed Clams
Caesar Salad
Broccoli Salad
Pioneer Macaroni and Cheese
Stuffed Chicken Rolls
Cheesecake (my weakness)
Sherry Wine Cake

All the recipe pages had clipart that correlated to the dish. Good work! She says these are her most asked for recipes -- I can't wait to try them! Thanks so much Joyce for the great package! :cloud9:

Mine came today from Brendan Taylor (sorry no dis name) who graduated from the C.I.A (culinary Institute of America?-my husband thought the other CIA :) )
I got a William Sonoma meat thermometer (no Brendan I don't have one), WS measuring spoons, these are really cool and heavy, and some Mango Butter also from WS.

My recipes included:

Roast Chicken w/pan gravy
Mashed Potatos
Glazed Carrots
Chicken Fried Rice
Cajun Chicken over Rice
Salmon Valencia
Polenta
Pico de Gallo
Sauteed Asparagus
Chocolate Crackers
and one that he calls "Tristan" it is a Red Snapper dish served w/cous cous & brocolli rabe ::yes::

I can't wait to try them all!

I am waiting patiently for my exchange to get here. :hyper: :bitelip: This afternoon, I am helping DD1 with her homework upstairs, and the doorbell rings. That can only mean one thing: UPS is here!!! Woo hoo!

So I go bounding down the steps to get my exchange, all excited to see who my buddy is and what she sent me. I open the door, and pick up the box from amazon.com addressed to DH!! :mad: :mad: :mad: How dare he order something from amazon.com for delivery during an exchange period!! :teeth:

A package of custard cups - OMG, it's like you KNEW that I made Jello Custard last night and broke one of my custard cups! Now I have extras - woo hoo!
A beanie named "Tasty" - my dd has already ran off with it!
A spatula and some spoons
A local cookbook with lots of great recipes!
