Holiday Recipe Exchange sent/received thread...COMPLETED!!

Still shopping for my special person! I hope to have it all together so that I can put it in the mail on Monday or Tuesday. :flower:

Another really big favorite of mine is Peppermint. :hyper: Here is a real simple recipe for those of you who like peppermint.


Candy Cane Cooler

3 scoops vanilla ice cream
1 1/2 cups milk
1 candy cane

In a blender combine ice cream, milk and candy cane.
Process until smooth.


Since I really like peppermint mint, I would use 2 candy canes and maybe add some peppermint extract also.

Chocolate-Covered Peppermint Ice Cream (SF)

Amount Measure Ingredient -- Preparation Method

30 chocolate-covered peppermint candies
1 1/2 cups sugar
3/4 cup water
6 egg whites
1 tablespoon vanilla extract
6 cups heavy cream -- whipped

In top of double boiler, heat peppermint candies until melted.
In a saucepan, combine sugar and water. Boil for 5 min.
Beat egg whites with electric mixer until stiff.
While beating egg whites on high speed, slowly add hot sugar syrup to egg whites.
Add vanilla, whipped cream and melted candy to the egg white mixture. Mix well.
Still-freeze.

Ok...so I boxed up my package last night.

And then this morning, I was up early to build an Ark, which I then rowed over to the post office so I could get my package in the mail. It's headed north...possibly by boat.

It's been raining here for 9 straight days. And it absolutely poured overnight last night. We're talking 7 inches in just a few hours. The river down the street from where I live has overflowed it's banks. I discovered this when I tried to get over to the post office...which is normally about a 15 minute trip round-trip. Took me an hour. BUT...I'm safe and my home is not in danger of being washed away...so an hour to get to the post office to mail off something that hopefully will make another person smile ----yeah, not a big deal. But I still want this rain to stop now.

Pink Peppermint Ice Cream

Serving Size : 1 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 cups evaporated milk
1 pound peppermint candy
2 cups heavy cream
1/4 teaspoon salt

Pour evaporated milk over the peppermint candy. Let stand 6-8 hours in the refrigerator.
Pour mixture through a cheesecloth to strain out undissolved particles of candy.
Whip heavy cream with salt until stiff and fold into peppermint mixture.
Churn-freeze.

Cranberry Chip Cookies

Recipe By :Best of Country Cookies
Serving Size : 108 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/2 cup butter or margarine -- softened
1/2 cup shortening
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 1/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup semisweet chocolate chips
1 cup vanilla chips
1 cup dried cranberries
1 cup chopped pecans

In a mixing bowl, cream butter, shortening and sugars. Add eggs, one at a time, beating well after each addition. Beat in vanilla.
Combine flour, baking soda and salt. Gradually add to creamed mixture. Stir in the chips, cranberries and nuts.
Drop by tablespoonfuls 2" apart onto ungreased cookie sheets.
Bake at 375 degrees for 9-11 minutes or until golden brown.
Cool for 2 minutes before removing to wire racks to cool completely.
