If it is, yesterday was the last day of freshman orientation. There is a make up scheduled in August though. At UT(TN) freshman sign up for classes at orientation, my DD went last week and was not able to get all the classes she wanted(but was able to get all the classes she needed, just not the best times). I doubt many classes will be left by the time you go to a make up orientation.
Financial aid offers were received late winter early spring, but disbursement to her UT account will not be for a few more days, perhaps the op is confusing offers and disbursements.
 
Your daughter apparently ACCEPTED admission at two different schools. Is this correct? Or are there 3 schools (I can't tell)? If so, this is likely against the "rules". I remember all kinds of language when I signed my acceptance to undergrad saying that I could only accept admission to one school. I know when I accepted for grad school it explicitly stated that by accepting this admissions offer I MUST decline all other offers.

I just got into grad school last spring. The paperwork was VERY clear that if I accepted admission to a school, I was required to decline all other offers. If I did not, I could lose financial aid and even my spot. I also remember wording close to this when I started undergrad.

I also know that our classes start in just over a month and they are already asking for students to confirm their attendance and their classes for the Fall.
Until this is done, you will not be cleared to receive your aid money.

I think it is obvious that the OP and her daughter are confused about some of the process. I hope this confusion does not end up hurting the daughters chances at getting into the school she wants and the classes she needs.

Oh, a bit off topic, but is your daughter going to UT Knox? I'm just a couple hours away at ETSU!

She is! ETSU was in the running too, but it ultimately came down to the fact that we live in Knoxville, so room and board is cheaper(staying at home), even with scholarships we just couldn't afford to send her away and it doesn't seem like a good enough reason for a loan when we have the option of UT. She may end up at ETSU for their newly accredited Pharmacy program, but for now she'll stay here.
