recipes for Easter or any other holiday you want to cook for........

we usually do a small ham and a small turkey and I love anything that goes with it......I am a veggie nut......so usually will do corn, brocolli, carrots, and a tossed salad too......or some asparagus too ......so how about you.......give me some new hints for a good meal combo
 
My friend makes the best ever baked beans. I have never asked her for the recipe. I only tell her to bring them. They have become a staple at Easter with the ham, potato salad and slaw. There's always macaroni and cheese deviled eggs and coconut cake. Some of the other side dishes change every year but these are the staples. The baked beans have 3 kinds of beans, kidney, butter, and navy. They also have hamburger and bacon in them. Yum Yum
 
Funny we have almost the same thing for Easter. Ham, Baked beans, potato salad and jello!!! These are the staples and if my mom tried to change everyone would be upset.
 

We have baked ham or lamb with mint jelly, glazed carrots, rolls,a jello mold, crudites tray (carrot sticks, radishes, olives, celery...),a butter lamb (butter that molded like a lamb), colored hard bolied eggs or deviled eggs, lemon pie and an easter lamb cake (pound cake cut to look like a lamb, then frosted with canned white frosting and sprinkled with coconut. jelly beans form the eyes, nose, and mouth).
 
I make a baked bean recipe similar to your friend's chessie and people always just love it! I got the recipe from a friend after trying it because they are just so good. It's a change from the usual baked beans. As for us we have ham, potato salad, deviled eggs, etc. And we always have a lamb cake too. ::yes::
 
I have a friend that makes those too! She gave me her recipe.

She browns about 4 strips of diced bacon, about a 1/2 pound of ground beef, and 1/2 pound of sausage.

Then she adds 2 large cans of baked beans, a smaller can of butter beans, and a smaller can of kidney beans. She said you can use any kind of beans you like too.

Then she adds 1/2 cup ketchup, 1/2 teaspoon of dry mustard, 1/2 cup molasses & a dash or 2 of worchestershire sauce.

Bake at 350 degrees for an hour to an hour & a half.

I had these & they are great!
 
We always have ham and I make a swiss potato casserole that goes very well with ham! It's not low-fat, but it's delicious!!
 
I am having lamb, sweet potatoes, asparagus, broccoli and salad. For dessert I am having cheesecake with strawberries.
 
Buckeye - would you share your potato casserole recipe?

For years, our standards included:

"Green Junk" (sorry - that's what we called it as kids & I don't know if it had a "real" name)
8 oz cream cheese
3 oz lime gelatin, powdered
1 c water, boiling
½ jar maraschino cherries
1 c marshmallows
12 oz pineapple, crushed
Combine softened cream cheese, gelatin powder & water. Cut cherries into halves. Add cherries, marshmallows & pineapple to gelatin mixture. Pour into mold or bowl & chill.

G-Gram’s Frozen Junk (what can I say - we were unimaginative children) ;)
2 c pineapple, crushed
2 ripe bananas
½ c maraschino cherries
Slice bananas in circles. Cut cherries into halves. Dump all ingredients into a shallow pan. Include juice with both pineapple & cherries. Freeze. This is best when allowed to defrost slightly before serving.

And we recently changed the recipe we used for broccoli salad to this one, because WDW always does it better! :teeth:

Broccoli Cranberry Salad
from Cape May Buffet at the Beach Club

4 cups broccoli flowerettes (chopped fine)
¼ cup diced celery
8 oz dried cranberries
¼ cup shelled sunflower seeds

Dressing:
1 cup mayonnaise
¼ cup sugar
¼ cup vinegar

In a large bowl, combine broccoli, cranberries, sunflower seeds and celery. Pour dressing over and toss. Keep refrigerated.

Here is the recipe for Swiss Scalloped Potatoes:

1/3 cup chopped green onion
1-2 cloves garlic, minced
1/4 tsp ground red pepper
3 TBS butter or margarine
1 cup whipping cream
1 cup skim milk
3/4 tsp salt
1/4 tsp ground black pepper
1/2 tsp nutmeg
2 1/2 lbs red potatoes, unpeeled, cut in 1/8 inch slices
1 cup (4 oz) grated Swiss cheese
1/2 cup (2 oz) grated Parmesan cheese


In Dutch oven, saute green onion, garlic, and red pepper in butter, stirring constantly, for 2 minutes

Add cream, milk, salt, black pepper, and nutmeg, mixing well.

Add potatoes to sauce. Bring to boil over medium heat and cook, stiring carefully, for 15 minutes, or until potatoes are tender.

Spoon potatoes and sauce into lightly-buttered 11x7 baking dish. (I don't have this size--I just use what I have!) Sprinkle with Swiss and Parmesan cheeses.

Bake at 350 for 45 minutes or until bubbly and golden brown. Let stand 15 minutes before serving

Serves 8.

(I am a garlic freak and usually use 2 cloves instead of one.) This is very good with ham!

I'll have to try some of your "junk"!
