Here's my reservations.

So, this is our first visit, and it's both dd7th and ds5th birthday. For this reason, we've tried to get a couple of character meals. Unfortunately... we've booked late and there weren't many choices. We are on the regular dining plan. How does this sound so far.
Arrive on Sunday afternoon, Feb 27, and will go to AK for a visit and counter service meal.
Monday = Epcot with a reservation at Coral Reef for supper.
Tues = MK no meals planned yet (cs meals needed)
Wed = pre ropedrop MK breakfast at CRT (2 credits) CS supper needed.
Thursday = HS Lunch for Fantasmic package at Mama Melrose + cs
Friday = AK and Tusker House pre-rope drop breakfast with a 2 pm departure for the airport.

Still figuring out all the CS meals, and I know that we'll have to do a few oop meals... but I hope our TS will be ok.

I think your meals sound great! I've never dined at Coral Reef though. It gets fairly mixed reviews but it's definately on my 'to try' list.

My favorite counter services are: Columbia Harbor House (MK), Flame Tree BBQ (AK), Sunshine Seasons (EP) and various places in the world showcase.

I want to try Starring Rolls (HS) and Yak & Yeti (the cs one, AK).

AK CS Recommendations: Flame Tree BBQ and Y&Y....
Monday - Excellent... eating at EPCOT ! Great decision. I've eaten at Coral Reef Many years ago so can't really voice an opinion but like the aquarium for the kids....they should LOVE that....

Tues / Wed : LOVE LOVE LOVE that you are eating at CRT ! It is a family tradition... we've been there 10+ times. The kids will have a blast ! I've never had Breakfast there but that should be a very special time for you all ! My FAVORITE CS at MK is Cosmic Rays Starlight Cafe in Tomorrowland. The best CS selection ever... plus the kids can watch Sonny Eclipse entertain them while eating....
Thursday... EXCELLENT CHOICE! F! Dining package ! I've done H&V and HBD F! Dining packages. When you see the line to get in to F! the OTHER WAY on your way in... you will be SO glad you planned this. I'll be trying MM on my next visit !
If Selection is important (picky eaters) then I find a Great CS for DHS is at Sunset Market (Between ToT and RnR). It is an outdoor eating area with several CS to choose from. Picnic tables... I can tell you more on selection if you are interested....

For the F! Dining package... BRING any snack and drinks INTO the arena... they DO have Concession inside...but it can get VERY busy...long lines...
