Help with fried okra

I made some tonight for dinner, and the breading came off half of it. What did I do wrong? Was I cooking at the wrong temperature (too high or too low)?
 
try a southern trick?

skip the breaded okra, ( after its been frozen you are going to lose the breading anyway)
place plain sliced frozzen or fresh( better fresh) okra into a tupperware bowl, add 1/2 cup corn meal mix, seasoning, salt pepper then cover with lid and shake,, fry in 3/43 inch of hot oil for about 5 to 10 min.
 
I do both the pre-breaded and I bread my own and the coating just comes off sometimes. If I have my grease good and hot to where the okra does not have to sit in it long it does better. You have to move it around too or it sticks to the bottom of the pan. Good luck.
 
I like Froggy's method the best.

If using the pre-breaded frozen kind, be sure that it does not begin to thaw before you drop it into the hot oil. It gets soggy when it starts to thaw & that will cause the breading to come off.

My tip - just don't eat it or cook it. ;)

I can't stand the stuff but I do know that it is tricky to get the coating to stay on all the time.

This is how I do it also....but I do 1/2 cup of flour with 1/4 cup of corn meal....I also throw the okra in buttermilk first to make the batter stick even better! :)
 
My trick is to head up the road 4 blocks and get some fresh hot fried okra from the chicken place! Better than cleaning up grease and my pan later and it's usually cheaper.

Delicious!!!!!

:rotfl2: This may be the best advice I get!

I have done both fresh and frozen. I used the frozen today, and I think I probably let it thaw a little before I put it in the pan, so I guess that may have been part of the problem.
 
I do it the same way froggy does but it seems like alot of the breading comes off anyway, it does the same on my fried squash. :confused3

corn meal mix is already mixed self rising flour and corn meal. same thing in the end:)

Well, if you use just corn meal.....the breading taste MUCH different than if you use the mostly flour mix with a little corn meal. I prefer the latter. I am sure yours is great though!! :sunny:

The coating fell off because it can't stand being near that slimy stuff!

Glad to know I'm not the only one then, especially beign from the South.
 
Actually if you want my REAL secret....

I just go to my mom's house. The BEST okra & no mess here!

i used to use that trick.. but moms is 75 miles,, and actually mines better now:)

For me it's only 25 miles - and well worth it!

(But my turkey dinner is better than hers, so I've inherited Thanksgiving & Christmas. Unfortunately my dd's have seen the error of my ways & aren't too keen on honing their cooking skills.)
 
FroggyinArk, Do you use Jiffy Corn Meal mix? What type of seasonings do you use?

My grandmother always cooked fried okra for me. It was the one thing that I always asked her to cook. It was heavily breaded and was lightly fried in a large black skillet. I seem to remember that she dipped hers in milk or buttermilk like tiggersmom2. It could have been an egg mixture. I'm going to have to call my aunts to find out!

Yum!!!

I've done both using straight cornmeal and also using flour. I like it both ways but never use buttermilk. It's always slimey enough to hold the batter! :)

I bet we've got some good cooks here on the DIS!
 
I don't know how to cook anything. My parents don't even trust me with a knife, they're scared I'll accidentally cut my finger off. I love okra though, yum!.
