Help with ADR's PLEASE

I will be going to WDW in Jan with my 2 kids DD 7 and DS 8, the initial sole purpose for this trip was for DD to compete at the Sand Dollar Invitational (gymnastics meet), but now it is becoming our Disney trip of the year thanks to the horrible economy. DH is staying home, so it is just the kids and I. Since we have a room discount thru sports travel, we do not have the dining plan.

This is what I have planned so far, but now I am questioning myself. Friday evening and Saturday am are plans that may have to eventually be cancelled due to DD is tenatively scheduled to compete Friday afternoon/evening, or Saturday am, we will find out in December, and I will cancel the one that we cannot use.

Thursday: 11:45am arrival at MCO, ME to All Star Sports
2:45pm at Liberty Tree Tavern

Friday
8:05 at Crystal Palace
7:55pm at Chef Mickey's

Saturday
8:10 at 1900 Park Fare
4:40pm at LeCellier

Sunday
10:00am at CRT
5:00pm at WCC

Monday
9:05 at Tusker House (EMH here in am)
3:55pm at 50's Primetime (Requested by both kids)

Tuesday
Opening--cannot decide

Wednesday

Nothing flying home.

I would like for us to see Spectro/Wishes on Thursday night, Illuminations on Saturday, and Fantasmic on Monday night. I was starting to think of cancelling LTT for lunch, and check in at All Stars Sports, then head to DTD to go to the T-rex cafe for DS, and then over to Magic Kingdom for Spectro and Wishes.

Please give me ideas.
