HELP PLEASE!!! Steak and Cake Help!!

Hi Everyone!!

Ok I desperately need menu help!! My phone planning session is next Monday and I need to tell Celeste what we want on our menu. Everything is pretty much settled except for a a sauce for the chicken, the beef and the cake.

We are having a buffet dinner at the Attic. We've selected the "Floridian Buffet", but we are changing the chicken to the Parmesan crusted chicken (because of the disboards rave reviews and pics- it looks so yummy) and wanted to switch the lamb to beef.
We were thinking about having the two pepper sirloin, until we saw Princess010103's menu tasting pics. My DF thought it looked like dog food!!

So here are our questions...
What sauce would you recommend to go with the Parmesan crusted Chicken?
What are all of your recommendations as far as beef goes??


As for the cake (with buttercream frosting - no fondant), we are going to have one layer with either chocolate or marble cake with peanut butter cup filling. And we want something like strawberry shortcake for two other layers... (maybe white cake, with buttercream and fresh strawberries).

For those of you who have had cake tastings...

Would white cake with buttercream and fresh strawberries be awful?
What fruity fillings would go well with white cake?
What fillings would go well with almond cake?
Would peanut butter cup go better with chocolate or marble?

this is amanda's mom (princessbride010103) We had the creamy mushroom sauce on our parmesan encrusted chicken it was very good!!!!!!

As for the cake, Amanda did a layer with bavarian cream and fresh strawberries, we didn't get to taste it with the fresh strawberries however the bavarian cream was excellent if you like custard you will like the bavarian cream!!!!!

I did not taste the steak but both Amanda and Eric were dissapointed by it. Eric said his lips were on fire from all the pepper.
The chef said he could do it with a herb rub instead of the pepper but they did not like the steak cut enough to keep it on the menu....... hope this helps

Hey There On My Cake I Am Doing The Almond Cake With A Baileys Filling, It Was Very Good, I Personally Like White Cake With Whipped Frosting And Strawberries!

Did You Go For Cake Testing Yet? If Not They Bring You A Big Yray Out With Yellow, Chocolate,almond And Marble Cake Slices Then Little Cups Of All The Filling So U Can Taste Everything With Everything!
 
We had chicken cordon bleu with a Mornay sauce. We also had filet mignon with a red wine reduction. The mornay sauce was pretty good, but I really liked the red wine reduction with the filet.

Our cake was Chocolate cake with peanut butter cup and Almond with Amaretto. Both layers were really good. I have to admit the almond amaretto was a better combination. The chocolate peanut butter cup was almost too sweet.
 

We wanted a pepper steak too. We also had a buffet and we decided on the slow roasted pepercorn beef strip loin - form the around our world welcome buffet menu. It was carved to order and it really was good and very tender.

For a filing with the almond cake, we went with the bavarian cream filling.
Never in a million years did I ever think I would have almond cake, but during our tasting my DD put the 2 together and really liked it.
The cake was so light and moist it was amazing!! Everyone really enjoyed it after the big dinner they had.

oki hope this helps. we tasted 5 sauces to mix and match with the parm chicken and the beef filet.

we tasted:They were:
Onion sauce- very tasty but did not like the texture
good with the parm chicken-it was kind of jel like in consistency but nice and flavorful-this was served for the steak
Parma rosa- So good not too strong but so flavorful(we choose this one) it is creamy and cheesy
some sort of cheese sauce- very very good but we had cheese potatoes so we thought it would be too much
Tyme sauce- Kind of gray but so robust, nice and fresh
good with anything. it is gray in color and is great with the steak
Sundried tomato- Nice if you wanted a wounderful red souce
And mike fave- lemon cumkwat ( i cant spell sorry)
This was so flavorful if you were having fish or grill chicken as for this. It was wow.very unique

as for the straberry layer maybe the bavarian cream filling it was much more pudding like. and still had a sublte flavor or the white chocalate mouse filling. i think that would work.

What fruity fillings would go well with white cake? o i loed moved the rasberry it ws so refreshing!!
What fillings would go well with almond cake? we had almond and amaretto it was the best in my taste. it taste like a toasted almond good humor bar. i loved it
Would peanut butter cup go better with chocolate or marble? marble

buttercream is yummy so it goes good with anything but I'd say that's a good choice for the almond because it is sweet and off sets the nuttiness. Or amaretto. I don't think strawberries would be awful but not necessarily the ideal paring.
I'd say peanut butter cup with chocolate instead of marble
Fruity fillings for white cakes: white mousse and strawberry, strawberry mousse with fresh strawberries (or raspberries), Bavarian cream with strawberries.
 
Thank you all for the advice. I'm so hungry now especially after seeing sunshine's pics!!

DF and I recently got new jobs, so we can't go down for our planning sessions. I really wish they could hold them on weekends. :sad2: So I've been relying on the taste buds of all of you disboard brides to guide our choices. So thank you all! I'm kind of crossing my fingers and hoping it will all work out.

My DF was a groomsman at a wedding a few months ago and the cocktail reception was delicious, but the food at the reception was awful and they had 200 guests and many many plates were left mostly untouched. The chicken tasted like beef and the beef tasted like fish. I would be so upset if we spent so much money and people didn't really eat anything at our wedding.

DF HATES mushrooms, so we can't have any mushrooms anywhere. And DF, my MOH and the 11 kids that will be there HATE spicy stuff, so no two pepper steak!! And while the Almond cake sounds amazing, it seems like we don't like anything that would go well with it. I don't like baileys and amaretto and DF doesn't like pudding (bavarian cream) :sad2:

Ok so based on all of your reviews and our preferences, I think we are going to go with the marble and pb cup. It sounds like while the choc and pb cup is wonderful, it may be too heavy and too sweet. We are having an Illuminations DP immediately afterwards, so I want people to still be able to eat many many more sweets 20-30 minutes after they have cake!!

And we are probably going to go with white cake with white chocolate mousse and strawberries. That sounds so yummy.

I'm so glad Amanda posted her pics so quickly!! I had faxed our menu all marked up to our planner earlier that day and it had that steak on it. But when we saw the pic, I immediately emailed our planner and let her know that we were going to change it. It doesn't look good at all. She may have saved our wedding dinner!

That sucks that you can't make it to do a tasting but I'm sure whatever you pick will be great. they are all yummy choices!
