Help Need food ideas for Camping in RV

Okay we are finally going out on our first RV trip to a campground up north on the river. I am looking forward to going but, my idea of vacationing is being waited on and not cooking for everyone. So I thought I would make up some dishes that just need to be heated or eaten cold or simple to prepare

I was thinking I would make a lasagna this weekend and freezing it to bring along, of course hot dogs on the grill for lunch one day, then steak or chicken on the grill, I was going to make italian sandwiches also for lunch one day then for breakfast just cereal or english muffins we are not big breakfast people.

We will be gone for 3 nights 4 days. Do you all have some suggestions.

I'm just so afraid I will forget something important. We don't plan on leaving the campground at all and I'm sure the store there is probably very expensive.

We had these last night, and I was just thinking that I needed to post the recipe. They might be a good thing to take along. The recipe is from the Taste of Home cookbooks.

Brown Bag Burritos

1 pound lean ground beef
1 can (16 ounces) refried beans
2/3 cup enchilada sauce (I use the whole can)
1/4 cup water (I omit the water and use more sauce above)
3 tablespoons minced onion (I add a small chopped onion instead)
1-1/2 tablespoons chili powder
1-1/2 teaspoons garlic powder
3/4 teaspoon salt
1/2 teaspoon dried oregano
15-20 flour tortillas (7 inches) These don't make very big burritos, so I suppose you could double the mixture and use the large tortillas
1-1/2 to 2-1/2 cups shredded cheddar cheese

In a large skillet brown ground beef (this is where I add the onion too); drain. Add next eith ingredients; bring to a boil. Reduce heat; cover and simmer for 20 minutes. Heat tortillas in microwave until warm. Spon 3-4 tablespoons of beef mixture down side of each tortilla. Top with 2-3 tablespoons of cheese. Roll up. Wrap each burrito in a paper towel, then in foil. Repeat with remaining ingredients. Refrigerate. Good cold, or remove foil and reheat in microwave.

DD and I made a big batch of these and put them in the freezer. She and her dad love to microwave a couple for a snack. I usually serve them with salsa and sourcream too, but they are great as is.
 
When we would camp, mom would always bring:

Spaghetti
Macaroni & Cheese with canned ham (like canned tuna)
Hamburger Helper
Sandwich stuff

If we were lucky, we got Hobo dinners (hamburger patty, sliced potatos, carrots & onions in foil packets).

And she ALWAYS brought Jiffy Pop & the makings for 'Smores!
 
You said you will be on a river. Is it a fishing river? I hate fish, but we always used to have fish when we camped near a lake, etc...

Hot dogs on a stick. Yum. I would stick with things you can do over the grill and avoid lasagna or things like that. It just doesn't seem as Campy to me. Also, cooking in foil packets, on sticks and on the grill reduces severely the clean up.

Bring LOTS and LOTS of marshmallows. You can almost survive on them. We would go through a bag a night at least. There were usually 6 - 8 of us in two campers.

We used to have this device that you put two pieces of buttered bread in, then tomato sauce and cheese. And you clamp it together and it makes a pocket sandwich. You cook it over the fire. YUM. Kinda like one of those sandwich grills you plug in now, but the real thing.

I would do sandwich meat and cheeses with chips for lunch. Cuts down on the cooking and need for a fire. Then do the cooked meals for dinner. Then do hot dogs one night, hobo meals one night, fish or chicken or steak or all three the other night.

I'm going to be no help whatsoever, but we are also planning our first camping trip in a few weeks time. I was planning on taking breakfast things, and snacks and going out to eat for our hot meals. I guess that's cheating though :rolleyes:

Have you though about bringing your crockpot!! We do and love it. First off I'm not cooking too much, just preparing a side dish and salad - dinner's already done.

Here's one of my favorite recipes:
Snappy Chicken
1 sliced onion
4-6 chicken breasts
1 cn of whole cranberry sauce
1 TB of prepared mustard
1 tsp of vinegar

Place onions on bottom of crockpot, place chicken on top. Mix remaining ingrediants together and pour over chicken. Please on low 6 - 8 hours.

I use frozen chicken breast too so they don't fall apart and everything turns out great! Serve over rice with a salad!
 
Our favorite camping recipe is to take yukon gold potatoes and slice them kind of thin. Put them on top of a piece of foil, add a couple pats of butter, season with garlic, celery salt and pepper and then seal them inside of the foil. Put on a hot grill and they are yummy when done. Great with just about anything. We've even had them for breakfast with eggs. Yummy!
 
Unless you have a super-powerful AC, I'd probably avoid lasagna. (If you cook it before you freeze it and have a microwave, that might work, but most people freeze lasagna before baking it.) Running an oven for that long in a small space is going to make it hot.

In addition to the recipes that have been posted here already, Hamburger Helper is an easy all-in-one meal when camping if you like it.

I make waffles for breakfast in our pop-up pretty frequently. I buy Jiffy brand blueberry muffin mix, and it has a waffle recipe on the box. You just add milk and an egg. You can even start it early before everyone wakes up by using the plug on the outside of your RV. Just remember that if it's chilly, they may be done before the steaming stops.
 
we camp all the time both in a tent and in my mom's motor home.
Here are some of the things we like:
Top of the list!
Smores! yep camping just isn't the same with out them!
pack lots of wood!

Hot dogs and hambergers
baked beans
bring a crock pot along you can throw stuff in it and have it ready when you get back

Hogie dip
Sub oil ( found near the deli)
ham
salami
prov. cheese
onion diced
tomato diced
letuce shredded
chopped everything into little pieces stir in oil mixture keeps for a few days

potatoes in aluminum bags
slice potatoes with skin on
sliced thin one onion
butter to taste
salt and pepper to taste
pesto ( I like about 4 tablespoons)
mix it up and throw over hot coals

marinate chicken or london broil this keeps for several days then cook when you are ready.

Corn on the cob
remove only the silk part
soak in water and then throw on the coals

wrap potatoes in aluminon and throw in coals

with having the motor home you can actually cook everything you normally would cook at home. We don't use the oven much just because of time. But on the stove or microwave....same as home!
but for us marshmellows and potatoes seem to be top billing

Those are great for fixing grilled cheese (or ham and cheese) and many other sandwiches. Another option for Lainy67 suggestion is using pizza dough.

My favorite is making pies with the sandwich irons.
Butter one slice of bread. Place buttered side down on the iron. Place about 1/4 cup pie filling then top wiht another pices of buttered bread (butter facing up. Close the iron and grill over the fire until toasted. Sprinkle with powdered sugar and serve

We will usually have tomatoe soup and grilled cheese on night (sandwiches made with the irons)

Chilli with fritos, cheese and raw onion (and raw carrots on the side) one night

and sub type sandwiched one night made up at home and wraped in foil(no "toppings" added) heat these on the fire

Hot dogs cooked over the fire, sometimes wrapped with biscuit dough ....measure out bisquik and powdered milk in a ziplock. Add water to make dough when ready to cook. Take a small snake of dough and wrap it around the hot dog. Flatten it out and cooked over the fire. Canned 3 bean salad on the side
 
This is a very interesting board, and what a fun thread! We just came back from our 2-week camping trip in our travel trailer. Our meals were not labor intensive as I was usually pooped after a long day of activities. Here's what I found to be simple (and they've gotta be simple with 2 small needy DDs!) and fast to prepare in the trailer:

1. Cheese and ham quesadillas (or any other ingredients you may prefer). **A good quick one with very few dishes afterwards to clean up!!!

2. Put into the oven Pillsbury cresent rolls with cheese and ham that you wrap inside. Serve with celery sticks that you precut at home.

3. Tuna noodle casserole.

4. Toss country style ribs into a ziploc bag and pour in your fave marinade.

5. In an aluminum bag, toss some sliced white or red potatoes, sliced white onion, 2 garlic cloves, a dab of butter, a dab of dijon mustard, salt, pepper. Cook on the BBQ for around 45 minutes.

6. KD mac and cheese. I usually toss in some sliced veggie dogs to add that food group into the meal.

7. Broccoli and cheese rice. Cook broccoli with the white rice. When the rice is cooked, toss in some grated cheese.
