Help me decide where to eat!

So we are planning a low key mini get away this December that is going to be focused on Magic Kingdom. It will be my husband, my self and our 3 year old and I will be around 28 weeks pregnant so 2 days in the park will be plenty!
We are planning to Check in to our hotel (Port Orleans Riverside) on Monday and heading to Disney Springs in the evening. The following day we are going to sleep in and hang out by the pool until around 4pm and will then head to the Magic Kingdom for Mickey's Very Merry Christmas Party. Wednesday we will be spending the whole day at Magic Kingdom and flying home on Thrusday afternoon.

I need suggestions for where to eat! We have opted not to do a dining plan this time and are mostly interested in quick service options (with the exception of the night at Disney Springs). On our last trip to Disney we had free dining and our travel agent upgraded us to deluxe dining as a gift for booking with her so we ate at a ton of restaurants (Cinderella's Royal Table, BOG, Le Cellier, Hollywood and Vine, Crystal Palace, etc) - it was great food and we had a lot of fun meeting characters but this time we want to be more relaxed and able to eat when we want and not miss so much park time! Plus since this is sort of a last minute trip and we are way past the 180 day opening for reservations, I'm sure there isn't much left.
 
On your sleep-in day, why don't you check out one of the Deluxe Resorts and grab a counter service breakfast (The Roaring Fork at Wilderness Lodge has the mickey waffles with yummy toppings) and that way you can take your little one to see some of the Christmas decorations!! The giant gingerbread house at Grand Floridian would be neat to see too.
 
Since you are spending time at Magic Kingdom I would check out the quick service places in the deluxe resorts. Captain Cooks in the Poly is awesome and they have Tonga Toast! Also if you stop off at Grand Floridian you can see their giant gingerbread house that they usually put up for christmas! Also Contemporary has Contempo Cafe and they have really really good food there. Animal Kingdom Lodge is also anotther cool place to check out on your morning off. You can grab breakfast at Mara which I hear is really good and your 3yr old would prolly enjoy looking at all the Animals!
 
Agree with going to Animal Kingdom Lodge. Great spot to watch the animals and the counter service is great!
 

Just thought of taking the boat over to ft wilderness and walking around there and grabbing a bite.
 
I love Port Orleans Riverside. We stayed there for the first time in February and I am in love! Sounds like a wonderful little relaxing trip!

I second the idea of going over to the Grand Floridian - maybe the day of your party. Take the bus to the Magic Kingdom then the ferry or monorail over. You could eat quick service there and then head to the party. I LOVE the GF at Christmastime. You can smell the gingerbread house as soon as you walk in the lobby. That would put me in the mood for the party!
