Help me choose park days!

It’s a mother son trip for my son’s 13th birthday!
Flying in Sunday March 9th landing at 11am. Planning to hit a park each day Sunday-Wednesday when we depart but will have until 5pm at a park.
It’s always my biggest struggle deciding which park to do each day. Is any day truly better than another?
We may skip animal kingdom and just repeat a park on Wednesday. My dining window opens tomorrow. Definitely wanting to get Ohana and Sci-Fi.

I typically go to touring plans and check their anticipated crowd calendars. I fly in 12:30am on the 8th and will be doing AK and Epcot on the 8th (Garden Rocks Concert that night), DHS on the 9th, MK on the 10th and Epcot again on the 13th. I have 2 days without plans for my birthday the 11th/12th but will likely end up park hopping depending on how I feel in the mornings, since I have dated tickets.
