Help! Last/Late PS times??

This is our first year to make a late PS time. We are at the very last PS time for 1900 Park Fare for dinner one night during our stay. We wanted to do it that way to fit into our plans.

Anyway, after we made the PS, I started worrying about it a bit. I know it's Disney..and I love them dearly...but do the last/late PS times get a little skimped on food-wise? Is everything on the buffet still hot..brought out to replenish, characters still willing to interact, etc?

Has anyone ever had a last/late PS time? I'm soo curious to know how the experience was for you?

I asked the same question awhile go and I was told that at 1900 Park Fair you will be wonderful.... also there is a dance between Cinderella and the Prince that you will get to see being the last ones to go.

I was originally planning this but decided I wanted to get out and view the Water Parade on our first night so that we didn't have to thing about missing it again
