Summer Squash Caserole
I am generally not a recipe follower, so this is a pretty loose version of the recipe, I don't really measure, I just wing it.
4-5 summer squash chopped into 1 inch(ish) chunks
1 bag of croutons (I use seasoned ones, Italien or cheese & garlic)
1 can cream of anything soup (I use celery)
1 big blob of sour cream (like 8oz I'd say, I use about 1/2 the 16oz size)
1 cup(ish) of shredded cheddar (or whatever cheese you have)
bread crumbs
Mix ingredients together in a bowl (except bread crumbs), spray caserole dish w/ nonstick spray and pour mixture in and sprinkly bread crumbs on top. Cover w/ tin foil and bake at 350 for half an hour then take tin foil off and bake till it starts to brown. Cooking time is approx, I'm not a timer either, I just go with it and see when its done.
My friend adds butter to hers, but I don't, I mean, all that sour cream and cheese, really... who are we kidding?
