Help create my daily plan

I am not happy with my daily schedule as of right now. Something about it seems off, like there's not enough time to do everything but I can't come up with a solution. Does anyone want to help?
Here are my basics:
Trip 11/8-11/15, (Sat-Sat) staying at Caribbean Beach
7 day hopper tickets (we could increase the days if we need to)
Must sees and things set in stone:
Late lunch/Early dinner at Raglan Road on arrival day
7:15 AM ADR at Chef Mickey's on 11/9
Lunch at ESPN Club for the Ravens game on 11/9
Must see Fantasmic that week
Must go to MVMCP
Would love to go to EP on Monday 11/10 to enjoy the last day of F&W

I don't feel like I am trying to do too many things I just can't seem to find a schedule that feels right for us. I am probably over-thinking it entirely but if someone wants to help, I would be eternally grateful.
 

Okay so not knowing your favorite parks or any additional details about arrival and departure times, and DDP or not here's what I would do. (I think 7 day hopper is plenty of time to do all the things I want, however I am a WDW many trip visitor and previous CM)

Nov. 8th - Arrival

Late lunch/early dinner at Raglan Road (you should be able to get ADR for this) then I would probably just enjoy the rest of my evening at Downtown Disney and my resort.

Nov. 9th

7:15AM Chef Mickey's Breakfast
Magic Kingdom after breakfast until lunch at ESPN club
Hollywood Studios in the evening; Fantasmic @ 6:30PM; park closes @ 8PM

Nov. 10th

Epcot - Last day of Food and Wine
Park Hours 9a-9pm Illuminations @ 9PM
Dining: enjoy food and wine fest offerings

Nov.11

Animal Kingdom in the morning and Magic Kingdom in afternoon
Wishes @ 9PM

**Or a day little park time, with resort rest, crowd levels should look lighter as week continues**

Nov.12

Park of Choice!!!

For me that's Hollywood Studios with lunch at Primetime Cafe

Nov. 13

Morning Epcot and do MVMCP this night! Crowd levels looking very low!

Nov. 14

Morning Animal King - character breakfast at Tusker House
rest
Epcot then that evening has EMH til 11pm.

Nov.15

Pack up, check out
If time - go to favorite park/place last time


**According to this plan and your arrival and departure time you'll just be getting use of your 7 day hopper - and i don't believe you'd benefit from paying for another day even though the increase isn't that much more!!!

Hope this helps - some I enjoyed checking this out really fast. IF you want to talk fast passes or ADRs to I'm ready!

I probably should have added flight time :) On arrival day, we land at MCO at 9:30 am so this gives us almost a full day. My original plan was to have a meal at Raglan Road (I already have this ADR) and then spend the rest of the evening at DTD or at the resort. On departure day, our flight leaves at 7:15pm so it looks like ME will pick us up around 3pm, again almost another full day. We currently have an ADR at Crystal Palace for 8am that morning.
We do have the dining plan so I have already made several ADR's but since I wasn't in love with the plan, I am willing to change those around.
