1.) Swim with the sharks at Typhoon Lagoon (or more like, snorkel above them, but it's still great)
2.) He can take a surfing lesson there as well! That's extra, before the park opens
3.) Rent a water sprite or go bass fishing on the lake
4.) coming from a gamer geek myself, disneyQuest is touch or go. The really cool things had long lines, and everything else is not much more than you'd find at a quality arcade in a large city. My vote would be Innoventions instead, which is at least free. Let him go nuts and watch

5.) He'd probably LOVE La Nouba, if he's really into music, and that's good for the whole family. Parts of it are "like a funky, mellower NIN", and you can tell him that came from a rock station radio DJ.
6.) The games area after Mission: Space. They're world interactive, so he can even play against people in the park from home.
7.) Ice Station Cool (Club Cool now?) in Epcot. be sure to ask a CM about which one is the REALLY nasty one and slip it to him. yeah, I'm cruel.
8.) The magic shop on PI (someone correct me if I'm wrong on where it is). They do demonstrations and such there, not to mention learning magic tricks is always fun.
