Mom, pregnant DD and I are taking a roadtrip to see DS graduate from basics. I need healthy roadtrip snacks.
Mom usually eats very heart healthy because she wants to and because Dad is a heart patient.
DD is pregnant and so far I haven't seen her eat very healthy, this would be a great time to nudge her along the healthier lines.
Any ideas?
TIA
I make my own snack mix in a huge bowl... and put smaller portions in either a ziplock baggie or one of those new freezer container's-I think it is from Glad.
It is a 2 to 1 mix. It is 2 parts nuts and/or seeds to 1 part berries/dried fruit.
I like using cashews, almonds, sunflower seeds, unsalted pretzel sticks, dried cereal (cheerios, life, frosted miniwheats all work well. Flake cereal just crumbles and makes a mess)-I use 2 cups of each.
The dried fruits I prefer are dried blueberries, crasins (cranberries), strawberries, apricots, and strawberries. Dried banans give a little crunch. Dried watermelon works well but it is hard to find and is more expensive. I use 1cup of the fruit. Mix it all together in the bowl & then just divide it up into the smaller containers.
My mother puts raisins, figs, dates, prunes in hers. Just need to be careful that some dried foods have a "sticky" factor. I keep a large container of baby wipes in the car for this purpose-easy clean up quick!
