where one can watch the fat & sodium?
thinking more like salads than burgers & fries, etc
 
Here is a link to menus at WDW. In all parks you can find fruit cups, salads and healthy choices. In Electric Umbrella in Epcot, I had a great cup of bean soup (it may have had lots of sodium, tho). In The Land in Epcot, there is definitely healthy choices. In MK, Columbia Harbor house and the Aloha stand (frozen yogurt) are my favorites. MGM has baked potatoes with or without toppings at a stand to the left before you get to RRC.
The Minnie Mouse Ice bars are yummy too!

World Showcase has some good choices - the stand in Morrocco comes to mind. Epcot is probably the easiest park to eat in terms of variety - including healthy alternatives.

Almost everywhere you can get a salad now - although they are often loaded with dressing and croutons (you can probably get the dressing on the side - and pick around the croutons).
 
I very rarely eat any type of meat. But there is a grilled chicken wrap at Pecos Bills which is delish and I usually have one each trip. Also, if you like veggie burgers, some of the fast food places (Cosmic Rays) have those now and you can dress them up with the toppings bar. It is served on a whole wheat roll. Although they are not the best I have ever had they are not the worst either. You get carrots with them instead of fries. Fresh fruit cups (I had on in AK and it was very yummy) are available at several places in the parks. 50's Prime Time has stuffed green peppers that have a rice filling (no burger) that is very good. Back Lot Exprss in MGM has an excellent grilled veggie sandwich. I think there are many healthful choices now being offered at Disney that are very good. Have fun looking over the menus at the restaruants and I hope you find many yummy, healthy choices on your trip. I try to do the same thing but I don't want to eat salads every day and I usually find things that are healthier than the traditional burger and fries even at the fast food places.
 

MK
- Pecos Bill's has a great Kit Carson Salad (with lime dressing) and other healthy choices.
- Cosmic Rays will give you carrots instead of fries. They have chicken and veggie burgers too.

AK
- Tusker House had a nice grilled salmon served with green beans and rice.

MGM
- I like the ABC Commissary for variety.

Epcot
- Plenty of choice here, especially in World Showcase. The Tangerine Cafe in Morocco has shish kebob, salads and such. Matsu No Ma lounge has freshly made sushi and other light items. The Kringla Bakery in Norway offers some sandwiches.



Don't be fooled by salads all the time though. Many can pack as many or more calories and fat than a burger plus fries.
