Alrighty then...
So I've been telling you guys that we have been doing some shopping and getting some things together for our trip. I apologize in advance for the pic quality, all of these were taken on my phone. It's just a lot easier and faster to take and upload pics with it.
I haven't told you about this yet. Thursday I came home from work to a little Mother's Day surprise from Joe! He bought me one of the small video cameras. I had been thinking of possibly buying one of the FLIP's but Joe beat me to the punch and bought me this Sony Handycam instead....I put it next to Josie's new DS so that you can compare the size of it. It's super small and super light. It uses an SD card so I save to the camera's hard drive and the card and I can download at the resort in the evening, etc. It takes great video!! What a great hubby huh?
The other thing I told you about was our new stroller....here's a pic of our choice. I loved the Coffee Stripe print. Josie seems to really like this stroller and I think it is going to work out really well at the World...
Leona and Jay were at Lexi's practice last week when they noticed a little girl with some thick flip flops on. They asked the Mom where she got them and stopped on the way home and bought BOTH girls a pair of these super cute shoes! How sweet is that!
Next....we started working on our countdown calendar on Thursday. I surprised the girls with this...I found a 48 piece puzzle ( I couldn't find a 30pc for the life of me), secured 18 pieces of the puzzle with scrapbooking glue dots, and used ID sleeves to hide a puzzle piece for each day leading up to our trip. Joe used my Mickey Head punch I bought from Hobby Lobby to punch out the different colored Mickey heads. I glued and numbered one for each sleeve. Each day the girls are marking off one of the Mickey heads and getting the next piece of the puzzle. They are using the glue dots to secure the new piece each day. On the last day before the trip they will have the last piece and a complete puzzle. The are really enjoying it. Here's a pic...
The last update today will concern the cake I made last night. This is a cake I made for a coworkers granddaughters first birthday. This cake turned out to be a caketastrophe. I've made a jumbo cupcake for a topper and as cake by itself several times, NEVER any issues. I was expecting the two bottom tiers of this cake to be the booger but boy was I surprised.
First when I was assemblying the cupcake and started to ice it, the domed part broke in half at about 1am this morning.

(The other two tiers were already done.) So I had to bake another cake. After about an hour and half later the second jumbo cupcake was done. I got it all assembled and put it on top, iced it and all of a sudden the icing around the bottom fell off on the side of the cake in about a 5 inch section. I was like are you kidding me????

So I tried again. It is now about 4:30am. I scraped off the fallen icing and attempted it again.
About 5:00am I had fixed the section and everything looked pretty good. I watched it for about 30 minutes while I attempted to clean up some of my mess. At 5:30am all was still good so I hopped in the shower so that I could try to catch a little sleep before I had to deliver the cake at 11:30am. I took a shower came out and something told me to take a look in the box and look at it.......
Yep you guessed it...the icing slid off the cake AGAIN!!!!!! So I scraped all of the icing off and made a new batch of icing. I started from scratch. I re-iced the cake and within 10 minutes....there was my new icing on the side of the freakin' cake.

So I just stopped went into the family room and just thought about it...at this point I hadn't slept in 26 hours. I thought maybe some quiet time might generate a different idea/approach. Something occurred to me. I had the window open all night because it has been beautiful and the breeze felt wonderful. Well it had rained a little off and on. My problem was the humidity. Buttercream and humidity do not do well together.
So I shut the window. Made a new batch of icing, iced the cake and FINALLY everything was fine!

I finished with about 45 minutes to spare. Here is the cake that is a result of this long winded story. After all is said and done, I think it turned out pretty cute. The cupcake is the baby's smash cake, triple fudge cake and classic buttercream. The bottom two layers are white cake, almond buttercream icing covered in buttercream fondant. All of it is edible.
