I actually had to work today. :-( Heading home in 10 minutes to start cooking. Luckily, I made a bunch of stuff over the weekend and yesterday. We have everyone at our house tonight for the second seder.
I don't know about Weight Watchers, but we do use Egg Beaters for most of our Passover baking. Cuts down a lot of the fat and all the cholesterol. We've also found that we can often reduce the recommended amount of oil without a problem. In fact, on a couple of recipes (like our Passover rolls), we actually like them much better with less oil. Lighter and not as dense.
