I had a party and made a 12lb spiral cut ham. I have probably, 8 pounds left.
What can I do with it? I can't eat ham every night this week. Can it be frozen? and does anyone have recipes I can use it in?

I have the hambone too and will use that in a lentil soup unless someone has a better idea.
 
Yes, you can freeze it.

I use it in quiche, Chinese pan fried noodles, corn chowder, or sauteed with eggs, french toast or pancakes.
 
Here is my go-to recipe for leftover ham. It is better on the second day, so usually assemble it the night before I'm planning to serve it and then just warm it up, so a great weeknight dinner. I also skip the bread crumbs and butter on top.

Country Ham and Macaroni Casserole

1 lb country ham slices or regular smoked ham in one piece
1 large onion, diced
1 lb elbow macaroni
2 cups shredded extra sharp cheddar cheese (8 oz)
1 cup sour cream
1 can cream of chicken soup
1/4 cup (1/2 stick) margarine, melted
1 cup dry plain bread crumbs

1. Heat oven to 400º.

2. Bring 4 quarts water and ham to boiling in large pot. Once water begins to boil, remove ham to a plate. Add onion and macaroni to pot. Return water to boiling; cook 8 minutes, stirring occasionally.

3. Coarsely chop ham, discarding any fat and bones.

4. Drain macaroni and onion and return to pot. Add ham, cheese, sour cream and soup. Scrape into a 13x9x2 baking dish. Pour melted margarine over top. Sprinkle with bread crumbs.

5. Bake in heated 400º oven 30 minutes or until heated through and top is golden brown. Let stand 5 minutes before serving.

- pinto beans and ham (ok almost any beans and ham)
- you can do a hash with it
- sandwiches
- Also, I have frozen mine before and it held up fine.

Yep, you can freeze it. Other uses:

Ham and cheese omelets/frittata/quiche/breakfast casserole. Might come in handy closer to Thanksgiving when people are sick of turkey!

Split pea soup -- mmmm; there are a lot of recipes for soups with ham -- cheddar and ham; potato and ham; etc.

My Dad recently made ham salad with some leftover ham. It was THE best ham salad...ever! Of course, you need a grinder or a grinder attachment for your KitchenAid. :rotfl2:

You can make it in a food processor, I do that.
 
Definately can freeze it. I have 2 bones in my freezer as we speak.
Maybe you can freeze some in individual sandwich portions.

My family likes what I called creamed ham.
Basic white sauce with some frozen mixed veggies thrown in. Add diced ham to it, and serve over puff pastry shells.
 
Cut it into portions before freezing. You do not want to thaw the whole thing to cut off just a piece and then refreeze the rest, over and over.

My family loves home fries with cut up ham. I boil potatoes cut them into chunks and sauté with onions. I add the ham just before it's done, just enough to warm. I like to season with rosemary.
 
Best Crockpot recipe ever!!!

Cube up the ham (about 1-2 lbs)
1 can of broth
1 onion
1.5 bags of frozen green beans.
8 hrs on low
Yum!! Seriously, YUM!
 
once you cube it you can freeze it in a freezer bag & use it later for just about anything. toss it into soups, eggs, omelette, salads, dress up a pasta, egg, or potato salad.
 
Ham freezes fine.

If it was whole, I would take off the top inch and cube it for soups and casseroles. Then, I would cut off 2" intact slices and freeze that way - you can use them like ham steaks, just defrost, warm and serve. Keeping it in a block keeps it from drying out in the freezer. The bone (and scraps) either go into a bag in the freezer for later or into a pot for stock or soup, as you planned. You can freeze the stock for another time, too.
