@8-10 fresh mint leaves or to taste
2 TBLS. simple syrup*
club soda
ice
** simple syrup- bring 1 cup of water to an "almost a boil"....then add 1 cup of sugar. Stir until disolved. Remove from heat. This keeps FOREVER in your fridge.
Put mint and syrup together in a glass. Crush together for about 30 seconds, until you have a nice minty smell. (I actually bought a crusher for this)
Squeeze the juice from 1 lime into the glass. Add 1/2 half of the squeezed lime to the syrup mixture. Add rum and ice. Top with club soda. (Dave likes less, I like more) Stir.....YUM!![]()
