I used half board plus vouchers for the first time 2 weeks ago - they are amazing value for money, in my opinion, if you prefer to have at least one table-service meal per day/evening.
I used ours at Cape Cod and Billy Bobs restaurants, for evening meals after the parks closed. Both these restaurants can be reserved in advance, which means you can eat as soon as the parks close, with no queues, and minimum waiting.
Working out how much we would have paid if we hadn't had the vouchers, I reckon I saved 25%, just on 2 meals

If we'd chosen to use one voucher for lunch at the Lucky Nugget instead of a table service meal in the evening, we would have saved even more money - as the Lucky Nugget lunch is a character meal (and a really good one in my opinion), and is currently 30euro per adult, 15euro per child without vouchers.
At the moment, you pay £17 per adult half board plus voucher, and £8 per child. You have to pay for the vouchers for each member of your party (aged 3 or over) and for each night that you are booked to stay in a Disney onsite hotel. There are other options - half board standard, and half board premium. I used the information from the Disney brochure to make my decision on which was best for me.
Next time I stay onsite, I will definitely use half board plus vouchers again
