Hakuna Matata, NO Fooling it's April!!

Good morning Team! I went to my training session last night - the gym was empty! The trainers were working out themselves. I was the only client there. I guess most people did take Easter Monday off. Something I'll have to remember for next year!

Sue - I asked my PT about the pear. He said he thought that pears might have more fibre than apples but he wasn't sure. I haven't had a chance to look that up.

Connie - Glad everything worked out with your neighbours! Land/boundary issues can be pretty sticky. As for the mixers, I think they're great and I would love one on fruits and veggies. I am looking for new ideas on how to get more veggies into my diet. I'm kind of tired of eating the same old salad for lunch everyday.

Denise - A walk with your DH and watching the sunrise sounds like the perfect way to start the day :)

Good Morning Team! Just a quick drive by here - need to get going this morning.

The dogs and I did get in a 4 mile walk, although very slowly, then I did my leg weight routine - then Scott came home and wanted to do a loop, so we did another 1.25 miles, even slower, by that time my knee really hurt! I am hoping that if I can get a weeks worth of leg routines in, then the knee will start the healing process again - if not, it will be off to the orthopod again. I just need to force myself to keep up the weight routine!

Another nice day here, I will get out for another good dog walk, then work on weeding the rocks:lmao: (grass keeps growing in the rocked areas).

Hello Team!!!

Sorry, I have been away. Although I am done with school, I have been busy busy with birthdays, meetings, spring cleaning, Easter and my new addiction Superpoke Pets. I'm not kidding...I am an addict. LOL! Erica had signed up through Facebook, but she isn't very active with hers. Anyhow...Jordan says that I love my pet ckicken, Hawk, more than my doggies! Not true!! We have also been runnnniiing! Jordan is up to a 5 mile wog on Sundays and I follow that up with 8 miles on Monday. We are going to the gym every morning before work at 5:15, so my morning posts have been sparce. Oh and I'm back to Weight Watchers..I can't seem to get the post-marathon 10 pounds off of me!! I'm hoping the meetings will help. I have to pay for them now, untill I get back within 2 lbs of my goal weight and then I'm free again. Soooo wish me luck!! :wizard:

I noticed the question was fav movies and snack. My fav movies are Labyrinth, The Lost Boys and Goonies. My fav movie theater snack is popcorn (I like the butter, but I usually go without). My at-home snack is my cereal sundaes...current choice is low-fat sugar-free chocolate tracks ice cream with Reese's Puff cereal. Yuummmmmmmy!

Oh and food choices that I have at home. I always keep lots of friut and frozen veggies. Whole grain, high fiber bread are a staple, as is low fat yogurt. My not so heathy items are sugary cereal and any 1 or 2 point ice cream. I used to be a beer drinker, but have cut back a ton since we have been trying to get pregnant. I can honestly say that I have always been a very healthy eater at home. Now...when we go out to eat and when we take vacations I tend to splurge a bit. :guilty:

I have read through some of the posts, but I feel like I am sooo behind!

Dave - I too, love the Volt! I bet they will be a pretty penny though. I like that it's american and green :)

Vivky - I didn't see many people out while I was running this weekend. I think people were eating them selves sick from the Easter candy..too sick to run! Oh and I didn't know that you did voice over work!! That sounds like a blast! What made you stop doing that?

Connie - Not that I am a pro at the real estate stuff, but if you ever have questions just ask. I know about some of what you were talking about from school.

As for me 5 miles in 40 minutes and an hour of Zumba today.

Mine is an italian dish, escarole sauteed in olive oil and garlic, salt and pepper, with some chili peppers to taste for heat.

You can serve it over pasta with sliced Italian sausage (if you like) or just by itself.

Hummm Favorite Vegetable dish – Cooking for one I have so many one dish meals! You might consider this a side dish, but it is a one dish meal for me!

Frozen green beans, fried in a wee bit of olive oil, with sliced almonds-really needs no other seasoning! :upsidedow

Did you get the email Help Disney Plant Trees? What did you think about those Disney tote bags? I think they are Too Cute, but instead of the usual $1 they are $2.50. Still think I want a few! Could use them for gift bags-Right...LOL

I love Macaroni and cheese, and had to find a way to work it into a 'healthy' lifestyle. This is not the original recipe I used (making some food for Nancy's family) but it looks pretty close to what I used. Nancy's family said it was good, so that's all I have to go on!

Ingredients
4 ounce(s) pasta, elbow macaroni, 1 cup uncooked (I used Dreamfields)
2 cup(s) broccoli florets
4 ounce(s) cheese, cheddar, sharp, reduced-fat, shredded, 1 cup
1/2 cup(s) cottage cheese, 1% fat
1/3 cup(s) sour cream, reduced-fat
1/4 cup(s) milk, fat-free
1 large egg(s), lightly beaten
1/4 teaspoon salt
1/4 teaspoon pepper, black
Preparation
1. Cook macaroni in a Dutch oven according to package directions, omitting salt and fat. Add broccoli during last 2 minutes of cooking time; drain well.



2. Add Cheddar cheese and remaining 6 ingredients to Dutch oven; stir in macaroni mixture. Cook over medium heat, stirring constantly, 6 minutes or until bubbly.



Yield: 3 servings (serving size: 1 cup).
 
Veggie Pasta

1 can chopped tomatoes
2 stalks celery, chopped
2 medium carrots, chopped
1 medium onion, chopped
6-8 green onions, chopped
1 packet Equal or Splenda
1 t. basil
1/4 t. garlic powder
1/2 t. salt
1/4 t. pepper
1/2. t. oregano
1 T. vegetable oil
1 small can tomato paste

Put the veggies in a pot and cover tightly.
Cook over medium heat, stirring occasionally for 10 minutes
Add seasonings. Recover and cook over low heat for 5 minutes.
Add oil and tomato paste + 1 can water. Simmer for 30 minutes.
Serve over pasta (I use whole wheat rotini).

This has been a favorite for years in our house. Enjoy!

I love veggie cous cous. I use the instant boxed cous cous, garlic and olive oil flavor and I toss in diced tomatoes, bite sized steams asparagus, red onions, mushrooms and feta cheese. I have had this as a main dish before, however I usually serve it as a side to grilled chicken. I'm actually having that for lunch today!! Yummmmm!

OK...I'm on the clock in 5 and need to run to the girls room. Hope everyone is enjoying the April showers. They bring MAY FLOWERS!!! :flower3:
