The rules that affect you are that everyone staying must be listed in the room and that EVERY guest must be on the DP for the entire length of that reservation no matter their actual LOS. So yes, if they stay overnight they are supposed to be paid for the entire reservation.Even if the guest is staying only for the last night, they still need to be on the dining plan?
I just had an overnight guest - and I inquired at the desk before hand. The cast member said just come back on the day and they will issue her a room key. She never showed on the reservation at all and she only stayed the one night.

I assume what you're saying is to add them later with the intent of bypassing the DP rules. While this may work (or may not), to do so intentionally to bypass the rules would be dishonest. In this situation the intent is the real issue more than anything else. IMO Disney/DVC should allow some flexibility with the DP much like they did with the Food n Fun in the mid to last 90's where they'd officially let you drop ONE day front or back and often would allow you to drop both though they still required everyone to get it. They should also allow it to be purchased or added at check in. Still, it's their BBQ and we should attempt to follow their rules. After that it's up to THEM whether to alter their rules which Disney does all the time.That's a wonderfully sensible solution, assuming you remained under the occupancy limit. We've done this several times but in situations where we truly didn't know the person was coming or that they were staying the night. IMO it comes down to intent. Dishonest people will purposefully wait to add them to bypass other rules such as the DP rules. This option also assumes you're within occupancy. That's one of the reasons I think Disney needs to change their rules on the DP being added prior to check in but it's their rule and their choice. It's no different than using DP credits for those not on the plan, it happens a fair amount. If you ask honestly and are allowed, their rules their choice. Otherwise it doesn't matter, add them now or add them later if it doesn't make any difference on other issues such as the DP or occupancy.I had the same situation and was told the same thing by the CM at the front desk. Our guest was added the day he checked in (mid-stay), got a parking pass and a key. No problem.
