Ground beef recipes....cheap and easy???

Ground beef is pretty inexpensive, but I can't ever think of anything to use it in other than tacos, burritos, chili and the tater-tot casserole.

What are some of your recipes using ground beef? Especially on the cheap and easy side!

Shepards pie is a good one, there are prob a TON of varations on it out there, but mashed potatoes are involved. Id just google it and pick what sounds good to you.
 
A couple things we make...

Stroganoff

1lb ground beef
1 can Cream of Mushroom soup
2 cups egg noodles, cooked as directed
1/2 - 1 C sour cream.

Brown ground beef and drain. Add the soup, noodles and sour cream to taste. You can also add fresh diced mushrooms.

Goulash
1 lb ground beef
1 can Cream of Tomato soup
2 C elbow macaroni, cooked as directed
1 can Veg-All

Brown ground beef and drain. Add the soup, vegetables and noodles.

We have also made the goulash with leftovers from spaghetti night! The spaghetti noodles, cut into smaller lenghts, and spaghetti sauce take the place of the soup and noodles. It's a great way to recycle leftovers!
 
Our favorite is probably Sloppy joes- buns, manwich sauce and ground beef.
 

Standard from my mom :)

1 lb of ground beef
1 can of cream of mushroom
1 can of french onion soup
minute rice (can's worth)
water
salt/pepper

Brown ground beef in large skillet that has a lid. Drain fat. Put back into skillet.
Add cream of mushroom and french onion soup (sometimes I leave out a few of the onions b/c DH isn't as big a fan)
Fill one of the soup cans with the minute rice, and add to skillet.
Fill soup can with water and add to skillet.
Salt and pepper to taste.

Stir together then bring to a boil. Put lid on skillet, turn off burner. Let sit with lid on for 10-15 minutes (no peeking!). Serve.


DH also threw this one together. It sounds weird, but we really liked it.

He browned some ground beef with Lawrys. Drained the fat, put back into skillet and added some salsa. He brought it to a simmer for just a little while to heat through.

While he was doing this, he was baking some (NON SWEET!) cornbread, like Martha White's. When the cornbread was done, he crumbled a slice of it into a bowl. He then added the ground beef/salsa, and threw some cheese on top of all of that. Personally, I mix it all together. It doesn't look great, but it tasted SO yummy. But then, in my family, it's not beef stew if you don't eat it with a slice of cornbread crumbled in it, so I guess we're into the "gruel" look :)

My dad used to make a taco salad - bag of crushed up plain doritos, iceburg lettuce, tomatoes, grated colby cheese, and some browned ground beef (Seasoned with lawry's and chili powder). Serve with salsa on the side.
 
Ingredients
1 can chili beans (undrained)
1 can corn (drained)
1 can tomato sauce
1 box elbow mac
1 16 oz pack sliced velveeta cheese
1 lb ground beef
1 envelope chili seasoning (I use McCormick)

Directions
Preheat oven to 350'
cook pasta per directions on box
while pasta cooks, brown beefin skillet and drain
mix cooked pasta and browned beef in pot with all other ingredients except cheese. cook intill thoroughly heated.
pour 1/2 mixture into 9x13 baking pan add enough cheese to cover top then add remaining mixture adding the rest of the cheese to cover top. bake for 10 minutes or until cheese is completely melted.

We love this one. In fact we are eating it tonight! It's a great 2 day meal. popcorn::
 
Brown ground beef with purple onions, bell pepper, and mushrooms. Drain the ground beef, and fold in two boxes of (cooked and prepared) Kraft macaroni and cheese.
 
Taco Corn bread bake

1 can mexicorn or regular kernal corn
1 lb ground beef
1 packet taco seasoning
1 package corn bread or muffin mix
durkee french fried onions
shredded cheedar cheese
Brown beef with taco seasoning in frying pan till almost done
pour drained ground beef into a 8x8 pan
add the can of corn to the pan to create second layer
the pour corn bread mix on top of that and spread out
Bake according to package directions
last 10 minutes add chhese and some onions on top.. Yum!! :cool1:
 
Sloppy Joes: 1 lb ground beef, 1 cup of BBQ sauce. It doesn't get any easier!
 
There's a fancy French dish called S 0 S. I think it translates as creamed beef on toast. :wave2:
 
Hamburger Gravy

Ingredients:
1 1/2 pound ground beef
1 package onion soup mix
1 cup water, more if desired
2 tablespoons flour
1/2 cup water

I also add: dash of worstershire


Directions:

Brown ground beef and drain. Add onion soup mix and enough water to give it a "soupy" consistency. Dissolve the flour in 1/2 cup water and mix with whisk (or until there are no lumps). Stir slowly into beef mixture. Stir thoroughly. Should have the consistency of gravy. Serve over potatoes, rice or noodles.

This recipe for Easy Hamburger Gravy serves/makes 8
 
Spagetti (or any pasta) and meatballs/meat sauce is cheap and easy.

Mini Meatloaf: Take any meatloaf recipe and make little "balls" and put in a muffin pan instead of 1 big loaf. (Much faster to cook and control the portions)

Quick Shephards Pie:
Layer in a casserole dish:
1)Cooked ground beef
2) 2 packages of the boil in a bag veggies with cheese (I microwave them so they aren't frozen, we like the broccoli or cauliflower and cheese)
3) Mashed potatoes
Bake until heated through

Hamburger and gravy:
Cook mini hamburger patties and then add a jar of beef gravy. Serve on top of egg noodles or mashed potatoes.

7 layer dip (my favorite):
1 1/2 pounds ground beef
1 (16 ounce) can refried beans
4 cups shredded Cheddar-Monterey Jack cheese blend
1 (8 ounce) container sour cream
1 cup guacamole
1 cup salsa
1 (6 ounce) can black olives, chopped
1/2 cup chopped tomatoes
1/2 cup chopped green onions
DIRECTIONS
In a large skillet, brown ground beef. Set aside to drain and cool to room temperature.
Spread the beans into the bottom of a 9x13 inch serving tray that is about 1 1/2 inches deep. Sprinkle 2 cups of shredded cheese on top of beans. Sprinkle beef on top of cheese. Spread sour cream very slowly on top of beef. Spread guacamole on top of sour cream. Pour salsa over guacamole and spread evenly. Sprinkle remaining shredded cheese. Sprinkle black olives, tomatoes, and green onions on top.
I like to serve it warm and with the cheese melted, so I bake it until heated through. Serve with Tostito's Scoops chips.

Stuffed peppers, you can add extra rice to bring down the cost of the meat even more.
 
My family loves a make-shift Asian recipe with ground beef:

Brown 1 lb. ground beef
Stir fry one bag of stir-fry frozen vegetables
Cook 2 pkgs. beef flavored Ramen Noodles
Mix ground beef, vegetables, Ramen Noodles, seasoning packets (from the noodles), add sesame seeds, sliced green onion and flavor with soy sauce

Easy one dish meal...

You can play wth ingredients to suit your tastes, I have a friend who adds some chopped cashews on top!
 
Salisbury steak:

Ground beef
bread crumbs (I use italian flavor)
2 eggs
chopped frozen onions
salt and pepper

combine all the above like you would for a meatloaf. Form into hamburger sized patties, and brown in an electric skillet. Add a can of mushroom stems and pieces and brown gravy to cover the meat. Cover and simmer on low for 30 minutes, turning the patties over halfway through. I serve this with rice or mashed potatoes. This is DH's favorite, I just made it yesterday for his birthday.

Another quick meal we love is to brown the ground beef, adding fried mushrooms and onions. Serve with brown gravy and rice (and a dill pickle!).
 
Beefy taco rice (a pseudo-recipe)

1pkg beef rice mix (I've used the store brand with no problems)
1 lb ground beef (browned, with diced onions if you want)
1/2 cup salsa

Fix the rice, as per the package, adding the salsa & ground beef while its cooking. After its cooked, layer as followed:

crushed tortilla chips, beef mixture, shredded cheese, lettuce, tomato, salsa, onion, etc.

Very good stuff & fairly inexpensive.

Meatloaf or meatballs are always good. There are lots of variations. I like to make meatloaf with salsa instead of ketchup for a little extra kick. Meatballs are good because you can make them ahead and freeze them for super quick meals later. You can take a basic meatball and go with tomato sauce and spaghetti or a dill cream sauce for Swedish meatballs. I also have a really great easy casserole recipe that uses meatballs:

Meatball Sub Casserole

Loaf of Italian bread
Frozen meatballs
brick of cream cheese, softened
1/2 cup mayo
Packet of Good Seasons Italian salad dressing mix
Jar of spaghetti sauce
package of shredded Italian cheese

Cut bread into 1 inch slices and place slices in bottom of 13x9 pan
Mix together mayo, cream cheese and salad dressing mix; spread over bread slices
Sprinkle with half of cheese
Place meatballs over cheese
Pour spaghetti sauce over meatballs
Cover with foil
Bake at 375 for 30 minutes
Remove foil, sprinkle the remaining cheese over the top and bake another 15 minutes until cheese is melted.
 
I haven't had these in years but how about cabbage rolls?
 
Pizza tot casserole
brown ground beef and mix with a can of italian tomato soup or you can use a can of tomato soup, a can of tomato paste and add your own italian seasonings. Then put it in a casserole dish, sprinkle shredded mozzarella on top and top with a package of tater tots. bake at 400 for about 30 minutes until bubbly and brown on top.

Cheesburger n fries casserole

brown ground beef or turkey, mix with a can of golden mushroom soup and one can of cheddar cheese soup. Put in a casserole and top with a package of crinkle cut french fries. Bake at 400 for about 30 minutes until brown and bubbly.

These are easy and my kids love them!
