Standard from my mom
1 lb of ground beef
1 can of cream of mushroom
1 can of french onion soup
minute rice (can's worth)
water
salt/pepper
Brown ground beef in large skillet that has a lid. Drain fat. Put back into skillet.
Add cream of mushroom and french onion soup (sometimes I leave out a few of the onions b/c DH isn't as big a fan)
Fill one of the soup cans with the minute rice, and add to skillet.
Fill soup can with water and add to skillet.
Salt and pepper to taste.
Stir together then bring to a boil. Put lid on skillet, turn off burner. Let sit with lid on for 10-15 minutes (no peeking!). Serve.
DH also threw this one together. It sounds weird, but we really liked it.
He browned some ground beef with Lawrys. Drained the fat, put back into skillet and added some salsa. He brought it to a simmer for just a little while to heat through.
While he was doing this, he was baking some (NON SWEET!) cornbread, like Martha White's. When the cornbread was done, he crumbled a slice of it into a bowl. He then added the ground beef/salsa, and threw some cheese on top of all of that. Personally, I mix it all together. It doesn't look great, but it tasted SO yummy. But then, in my family, it's not beef stew if you don't eat it with a slice of cornbread crumbled in it, so I guess we're into the "gruel" look
My dad used to make a taco salad - bag of crushed up plain doritos, iceburg lettuce, tomatoes, grated colby cheese, and some browned ground beef (Seasoned with lawry's and chili powder). Serve with salsa on the side.
