Grilling a steak

We let steak sit out for 20-60 minutes before grilling and we always let it sit after for 5-10 minutes. We like the juices that seep out for the most part so we tend to put some over our meat as a "sauce". :)
 
So what about the whole keeping food below 40 degrees thing? :confused3
Never leave food out of refrigeration over 2 hours.
If the room temperature is above 90°, food should not be left out more than 1 hour.

The danger zone is 40° to 140° Anything cold should be below 40°, anything hot should be above 140°. If it sits in the danger zone for more than 2 hours, throw it out.

I take my steak out of the fridge about an hour and 45 minutes before I'm going to put it on the grill.
