How are they handling the gratuities for the crew if everything is cashless? How to tip for room service?

You still get the same tip envelopes for your primary servers as before, and you are free to add cash to those envelopes, or to add additional money to the gratuity via Guest Services, just like before.

You can hand cash to other people, such as room service, for tips. I tipped the transfer bus driver, the porter, and my cabana host in cash. It's fine. Didn't get room service but I would have tipped him in cash, too.

What's an appropriate amount to tip room service servers, porters, etc?

Room service we tip $1-2 per item in the order.

Porters at the port $2-3 per bag. And we err on the side of rounding up to the next $5.

I saw that tips are automatically added to the bill or can be pre-payed. What are those charges? And do they cover all staff? Housekeepers, restaurant servers, etc?

We usually put 5-10 dollars in cash in each envelope and tell all of the CM's (Server, Room Attendant, etc) to have a few drinks at the bar on us.

One tried to give it back when she said she didn't drink. I told her to use it on something that would bring a smile to her face. I find these little things often mean a lot to them.

Room Service we usually tip 3 bucks per order, larger if its more items of course but usually we order about 5 things each time.
