Good seafood

There's nothing special about seafood on cruise ships. Most if not all of it was previously frozen, not fresh. And good seafood requires a delicate touch that is just about impossible to achieve in the amounts they are preparing. It sounds like this is a good opportunity so go for it - but do not expect just because you are on the sea that you are getting the best of the sea. Like most of the food, it's good, not great.
 
That's one of the awesome things about cruises. She can order something she's never had before and if she doesn't like it, she can get something else.

Yes! An excellent time to suspend rules like "eat what you take." A great opportunity to try new things and eat only what she ends up liking. It may be a little wasted food in the short term, but a lifetime of wider interests will be well worth it.
 

Newbie Question: eating lunch in the main dining room, can you ask to try the crab or shrimp from the buffet? Or do you go get it yourself? Or is neither option cool...

Personally I would pick one or the other - buffet or sit-down.
