Which restaurants give more for the $?
Which sit-down restaurants can be adorable?
What's the best meal?

Don't want to look cheap but don't have much to spare.

Good Question,
I have had luck with Akershus at 3:30 for an early early dinner at lunch price. Trails End Buffet is a great dinner for like 12 or 13. If you can get to the Crossroads by Downtown Disney, go to Chevys for Mexican. 7 dollars per person and everyone is full and happy. Hope this helps.
 
We usually try to do several meals that are buffet or family style as opposed to menu ordering. We like the Garden Grille (great marinated steak) at EPCOT, Hollywood & Vine at MGM (you can do Fantasmic dinner pkge) and Trail's End at FW (lowest price)

We usually try to do 2 meals a day with a lite snack. also packing or buying snack foods for your room (Pop tarts, donuts, etc...) also can help.

Make sure you check prices on Deb Will's site yourself. Trail's End is more than the $12-13 mentioned above but it really is a bargain at lunch!
 
We had a trip where DH had been laid off. We rescheduled our PS dinners to PS late lunches which saved us significantly. We also found that many meals were more than large enough to share. Also, if you have a PS for a family style or buffet think before you go - are you really hungry enough to enjoy that amount of food? Or is the money worth the entertainment value? We also make a trip to Super Wal Mart for baby supplies, room snacks and drinks, including juice boxes, bottled water and soda. If you don't have a fridge just plan to ice juice for morning the night before, and get ice for soda and water in the room. Also, coffee from the store is usually better quality than you find in most hotels, and often there is a coffee maker in the room.
 
Trails inn is 9.99 for lunch and breakfast, 15.99 for dinner. kids are less. We plan one of each meal this trip. The food is the same as the HDDR. Other buffets may not be such a good deal if everyone is not big eaters. I know many older people just will not eat that amount of food. You might still want to do at least one character meal for the kids.
I agree that doing lunch as the big sitdown meal can save a lot as can sharring food. Portions are large many places and could be shared by more than one person. Split deserts too. Perhaps, one or two really nice dinner and them enjoy some fun meals such as getting hot dogs on main street could be fun too. Check out the menus and see what will work for you.

A less expensive option to the Character breakfast if it is still available is to bid on gift certificates from restaurants.com on ebay for Baskervilles. We did that in Dec. We were able to get a $25 gift certificate for around $10. The food was okay but the character interaction was great. We had the option of the buffet or ordering off the menu.

Your original post says that you and your DH offered to pay for dinners.
I'm not sure if that means you feel obliged to pay for evening meals only, which is usually the most expensive. Of course, every family's expectations, plans and habits differ, but maybe you could engage your in-laws in helping to plan the meals that you're going pay for each day, and make them consistent with your touring plans.
For example, if you're going to Epcot for the whole day, suggest a nice, late lunch so that you can eat a lighter counter service meal at dinner time and stake out a good location for the fireworks. Suggest trips to some of Disney's lodges for dinner buffets, such as Boma at AKL, Wilderness Canyon at WL, Trails-End Buffett at FW. My DH had a great time at AK, grazed on a few light snacks at the park, and then spent a leisurely time at the AKL having an early 6 p.m. buffet at Boma. And maybe plan one night where you suggest a nice, upscale place.
