I was at Walmart today and found these neat 'artist pads' - they are $4.97 and are like coloring books but wider (not too wide to easily fit in carry-on) and they include a set of crayons and 2 pages of stickers (must be at least 30 or so). They had two disney ones - one with Mickey, Donald, Minnie and Goofy and one with dogs/animals (I don't remember all of them, but I think Lady and dalmations were on that one). My son chose the Mickey one and dd chose the 'generic' princess one (ie: NOT Disney princesses). I figure with the coloring and stickers - that's good for at least 45 minutes on the plane. I already have it in the carry-on bag.

My little ones have little doodle pros and love them. My two-year-old will spend 1/2 hour - 45 min. using it. Which is awesome because he still eats crayons.
