Going again, help me work through this...

Out of the blue, DH has said the kids and I can do another Disney World trip. We go to Florida twice a year to visit his parents so have done one overnight to hit MK and AK in 2016 and we did MNSSHP in 2017. That has been it in the past couple of years.
The thing is, I need help picking general dates and figuring out if there is anyway to make it cheaper. We need a little while to save up some money as we already have a few other vacations coming up. It will be me and 3 DDs (so 2 adults, 2 kids) going. I have no problem pulling the kids out of school. We are staying on property, probably at one of the All Stars. I am thinking we will be driving to Florida and then DH will be staying at his parents house and drop us off at the resort for however long we stay. This way we will have a full grocery run but not pay for parking. We will be packing food for in the parks (youngest DD WILL still be using a stroller) but will probably do 1 or 2 quick service type meals during our stay. Kids will all have their own spending money and be responsible for whatever stuff they feel the need to buy. We need at least 1 day for each park, probably 2 for AK and maybe 2 for MK. I was thinking about doing either October or February, sometime around a 3 day weekend so we can have the most time for travel. Then I was thinking about doing either MNSSHP or DAH instead of that second day at MK because the kids loved the lower crowds during MNSSHP. But then I was thinking it would be cheaper to do the second MK day and if absolutely needed, we can always do MNSSHP on another trip. I was also thinking about doing a few nights at the resort and then leaving for a night and going back to his parents house for a down day but now I'm thinking that may be extreme. I'm driving myself crazy overthinking every detail!
So back to the question, about when to go? Also, I know a lot will say stay off property to cut costs but these kids have never done a true onsite Disney experience and I would like them to experience the 'magic'. It may be a loooooong time before I can get DH to agree to this again!
ETA we have access to Tickets at Work so will also need advice on whether to get a package through Disney or tickets separately but that may depend on dates.
 
February weather is usually great and usually lower crowds than Oct. However, if Star Wars opens in Dec, then all bets are off for crowds.

I would plan 6 park days. Our minimum is one day for each park, 2 at MK, but we prefer 2 at each park, 3 at MK. It's much more relaxing when you don't try to squeeze it all in each day. A down day in the middle at the resort and Disney Springs would be great, but leaving and coming back is not my definition of 'down'.

The cost of a value room is not that different from most offsite options, especially if you can forego a car. However, I suggest one of the renovated rooms at Pop Century. The bedding is much more comfortable, and the gondola might be open by your trip!
 
The first 2 weeks of February will be less crowded than October. Keep in mind that the last two weeks of February are school vacation weeks in the Northeast and a lot of us like to escape the cold/snow that time of year. Crowds will also be higher around a 3 day weekend.
