I don't think I've ever heard of Ricotta Gnocchi..sounds wonderful...
Easy as could be. Get a 1, 2 or 3 lb container of Ricotta. Use 1 egg for 1 lb, 2eggs for 2 lbs and 3 eggs for 3 lbs. Scrape cheese into a bowl, crack in the appropriate amount of eggs, season with salt and pepper(I do not measure this) mix well. Then take the ricotta container and fill it 3/4 of the way full with flour and mix that gradually into the cheese mixture.
To cook get a big pot of salted water going and a regular metal spoon. Dip the spoon in the water, use it to scrape a bit of dough and plop it into the water, keep going until you have a pot full. If the spoon is wet the dough comes off easier.
Let cook for 2 minutes after you put in the last bit of dough them remove with a slotted spoon or handheld strainer. Keep warm in the oven while you scrape, plop and cook the rest.
They're not "pretty" but it beats the hell out of boiling potatoes, ricing them, laying them out on the counter, mixing with eggs, flour , salt and pepper, kneeding into a dough, rolling into strips, cutting into balls and rolling them off of your fork... LOL
