There are a lot of gluten free message boards out there, you might want to ask your questions on some of those.
I've been gluten free (mostly) for several months now. For lunch I eat a lot of salads, grilled chicken, sandwiches made with gluten-free bread (love Udi's!, it's the closest to "real" bread that I've found), rice noodle bowls too. There are a lot of gluten-free foods (packed cookies, crackers, etc.) but they tend to be expensive. I like soups, Progresso chicken and rice, and Campbell Select garden vegetable are two of my favorites. And my own homemade hamburger/vegetable soup too.
As for desserts, I'm also diabetic so I try to avoid those most of the time but do splurge sometimes. There are gluten free cake/brownie mixes out now. Ice cream is a good gluten free dessert choice. Fresh fruits too.
There are lots of on-line recipes for gluten free foods at places like allrecipes.com. Instead of regular flour they use rice flour, tapioca flour, etc. You can buy those specialty flours at health food stores.
