I'm not sure if you still need this information. I was at Vero Beach for a week in January and am gluten free. It was wonderful and so easy to be gluten free. Wherever you are, just say that you have an allergy and the chef is sent out to talk to you. We ate at Shutters, Green Cabin Room and Bleachers by the pool. The chef will work with you to fix whatever you want. They have gluten free bread, buns, pasta, fries and the list goes on. We were at the character breakfast and they couldn't fix gluten free Mickey waffles, but they did fix gf pancakes. They have a dedicated fryer for fries and are very careful about cross-contamination. I had zero problems and all it takes is a crumb to make me sick. Every chef I talked with was very knowledgable.
