Gluten-free at Disney

My mom will be with us and she is on a gluten-free diet. She knows by now what to avoid, and I don't think it will be a problem for us to find gluten-free choices. What I want to know is whether there are any specific gluten-free items that Disney does well? Things like pastas, pastries or breads that she otherwise could not eat. Or maybe restaurants where she will have more choices than usual. Do you know if the Boardwalk Bakery serves any gluten-free items?

How about fried chicken, pizza, pasta, brownies, cookies, and anything else you can think of? WDW is the best place to travel with food allergies/intollerance.

I believe that the Boardwalk Bakery really only has the standard packaged baked good that you'll find all over WDW. I don't believe that they make anything gluten free themselves though I never really paid attention since I know they don't make anything that's free of all of my daughters' huge lists of allergens.

In the stickies on the disABILITIES! board is the email address for Special Diets. Email them asking for their list of gluten free products. They'll email you a huge list of foods and where they can be found.
