Gluten Free at Buffets

I was looking at the F! dining packages and saw that Hollywood and Dine was on the list for lunch. Which means we could do a character meal along with F! BONUS!

But my wife is Celiac. I know at Disneyland buffets, we'd just tell the chef and they'd make something special in the back and bring it to her. Is this the same way at WDW? Particularly at H&V?
