So this one plant I had grew a ton of great tasting cucumbers. Giant really good tasting cucmbers. Didn't notice on and it is 20 inches. Can I take the seeds and use them next year?

Sure.
Harvest the seeds and rinse off (with some thumb and index finger rubbing) the slimy coating. Let them dry. Even easier if you have a sieve.
