In all my stays at Disney we have never had any issues with room noise. Why is it that this seems to be such an issue at the GF resort, villas? Why are the walls so thin?

Disney unloaded Big Pine Key to be a DVC resort, because almost everyone that stayed there complained about the noise. In the so called remodel, they did nothing to help with the noise. The "real" DVC at the GF are much better at sound control., it just the BPK rooms that still have the problem.

So is the rest of the resort rooms at GF like this too?

We've stayed only in the main GF building several times before buying into VGF.

We'd occasionally hear noise from the hallway (the "chemically enhanced" kind) and sometimes hear the GF Orchestra faintly in the evening.

I don't recall ever hearing noise from nearby rooms then, nor during our VGF1 stays. That was definitely not the case when we stayed at BRV or in a Poly studio. At both, we could hear conversations, sneezes, coughs, etc. more clearly than we wished.

The walls are thin because the building was constructed circa 1988. Disney wanted to flip the building at the lowest cost and they were not going to remove the walls to install acoustic soundproofing. More modern construction, including the 'original' VGF building do have acoustic insulation which reduced noise transmission.
