If you are one of those folks who are skipping the car because you don't like driving, but can afford to pay for cabs - take cabs! So much faster! And you can always get a cab at a park or hotel.
If you are skipping the car because it doesn't fall into your
budget, skip the hotel meals that can't be fit into your theme park experience. If it were me, I'd skip them all with the possible exeption of those that can be reached by monorail from the Magic Kingdom - just wastes too much time.
But, you can reach most of the resorts if you want to.
You can monorail to the Contemporary, Polynesian, and Grand Floridian from the MK. You can boat it over to Wilderness Lodge or Fort Wilderness from the MK.
You can walk to Beach Club or Boardwalk from Epcot or monorail to the three monorail resorts by transferring at the Ticket & Transportation center - it can be a long trip. If you want to get to the Poly from Epcot, monorail to the TTC and then walk - it is usually faster.
You can boat to Beach Club/Boardwalk from MGM.
You can take a bus from the Animal Kingdom to the Animal Kingdom Lodge and eat there, if you want. Then bus back to the AK and catch a bus to your resort.
