Mid to late evening for your luggage?? We also land at 11:30am and have an ADR at Narcossees at 7:15pm. We expected to have our luggage before that. I thought it was 3 to 4 hours for luggage delivery??
They aim to have your luggage in your room 3 to 4 hours after you check in at the resort. So if you land at 11:30 you *should* be at your resort around 1:00 or so. Maybe as late as 1:30. With that, there is an outside chance of not getting your bags until 5:30, and if you plan on using Disney transportation to get to Narcossees, you should be leaving your resort 15 minutes after that. Disney recommends allowing 90 minutes to make it from point a to b using their transportation.
I stayed at the Poly last month, it was almost 2 hours. The DME line was very long, I landed at 11:25 on Sunday 5/8. When I got in line, a bus was just finishing filling. Didn't make the next one, was one of the first on the one after that. Got a text that my room was ready around 1:15 when we pulled into the Contemporary. The next stop was GF, then Poly.
I am also staying at the Poly CL and landing around 11:21am from Montreal, Canada. I always heard that the GF was 1st stop unless there were guests for the Poly on board due to the road design.

It varies based on demand. We stopped at the Contemporary first and then the driver went on a road behind the Magic Kingdom and then looped around to GF. Then Poly. I believe WL was last.
We usually land at 10:30 and have been at the boardwalk by noon and walking into Epcot by 12:30. It does depend how long the lines are and what stop you are.
When it comes to luggage and ME delivery, keep in mind that luggage can be lost enroute before even getting to MCO. It's always a good idea to have the first day's needs on your carry on and maybe even the next day's. That's what I do. My luggage has been lost a few times over the years.
That's a whole lot of bus travel packed into not a lot of hours. DME is only part of the problem. Were you planning to go directly from the water park to AKL? Otherwise, you'd be waiting for a bus back to CSR, then taking a bus to some theme park or Disney Springs, and then taking a bus to AKL. If that's the plan, I'd leave the water park about two hours before your reservation at Boma.
If it were me, I'd just hit the pool at CSR and save the water park for another day.
Let me join the chorus that says just plan to swim at the pool at CSR. They have a great slide and the pool area is nice. You'd be lucky to be in swimsuits and ready to walk to the first attraction at the water park by 2pm. Better guess would be 2:30-3pm.

Me too (I'm a baritone BTW.) Relax, enjoy dinner at Boma, browse AKL, and get to bed relatively early so you can hit the parks for RD the following morning
Arrived today. ME for our bus was Coronado, AKL Jambo, Kidani. Our flight landed at 11am. We used the restroom then headed right down. The line for the bus was a bit long, but it moved quickly. We were at AKL by 12:30ish. Our luggage was delivered around 4:30. Got a room text at 11 sayin. Our room wasn't quite ready. Got another one enroute to the hotel saying our room was ready for us.
I've had it take as little as 45 minutes and as long as 3 hours. And the one time it was on the shorter side we ended up spending at least 45 minutes at the check-in desk because they couldn't get our Magic Bands to work. Hard to predict but I'd give yourself at least 3 hours to be safe.
I read on another Disney information site, All Star, Animal Kingdom Lodge, Coronado Spring STILL have resort bus to Blizzard Beach. I saw this after Disney announced their water park bus routes.
