Fried pies

My dad is wanting some fried pies like my mom used to make. While I've watcher her do it many times and helped assemble. I don't know how to go from start to finish.

She used canned biscuits....one biscuit per pie.

Fruit such as fresh ripe sliced bananas, apples, etc.

Here's what I know:

You roll the biscuit into a circle. Place fruit on one side and fold over. Use a fork to pinch the seam together. Fry in a skillet in a little oil, turn and continue to fry.

I know she did something else, sprinkling with sugar or brown sugar, etc.

Anyone have a good recipe for this?

Almost sounds like a fritter.. Maybe you could google recipes for that (hopefully some will have photos) and see if you recognize it? Try the Pillsbury web site..

Thanks. I found a recipe online with pictures and they look just like moms....though she used fresh or canned (home) fruit, not dried.....but I think it works the same.

I grew up eating the exact same ones. Mmmm. I haven't had them for years and now I'm really craving one!!!

My dad's side of the family is from Oklahoma, so my grandmother made them often.

She used the canned biscuits, just like your mother.

Rolled them out and then filled them with whatever type of fruit she wanted. Generally just the canned pie fruit you buy at the grocery. She would also use pudding (chocolate and banana were favorites) for a filling.

She cooked them just like your mother. Roll out biscuit, put filling on half, fold over and close with fork. She would often dreg the fork in flour so that the dough would not stick to it.

Then fry till golden brown on both sides.

For the finishing touches? You don't have to do anything to them. They are excellent just the way they are, but you can sprinkle with powdered sugar or dizzle with a glaze.

For the glaze, mix together 1 cup powdered sugar, about 1-2 tablespoons milk and about 1/4 - 1/2 teaspoons vanilla. Drizzle over pies.

Hope this is what you had in mind. I have never used dried fruit before, and it seems like a lot of work to make it that way. But, i'm sure it would still be deliciuos.

Thanks! Yes I remember her doing that with the fork as well. Dad likes them made with fresh bananas. Just cut the banana in half and then down the center lengthwise. I'm sure she sweetened it some how though maybe sprinkled a little sugar or something in there.
