Planning on a trip this December with wife and our son, who'll be 16 months at the time. While we'd love to do either AKL for the animals or Poly/Contemporary for the convenience factor, we've narrowed it down to French Quarter and Coronado cause of the $$$$
Any thoughts on what's the better option with a child that young?

one positve with FQ whenyou have a young child compared to CSR is that the resort is much smaller. None of the buildings are to far a walk to the main building, pool, or bus stops. CSR is a very large resort unless you have a preferred room you could be doing some walking.

They both have a lot to offer.

POFQ is smaller and easier to navigate. Has the DTD boat which is fantastic. It's a short walk to POR which is also a nice resort to walk around at. No matter where your room is it isn't far from the bus stop or food court.

Coronado is much larger. It has 4 bus stops so getting to a bus isn't too bad. The food court is fantastic. The pool (Dig Site) is pretty awesome.

Cons: POFQ: Only has one bus stop. I know that is listed as a pro above but sometimes you will have to stop at POR while going to the parks. We only had to do this 2 times on an 8 day stay so it isn't bad but still a slight con.

Coronado: Conventioneers.. When we stayed there was a convention going on and while we did not see them all the time there were still lines to get drinks in the refillable mugs and things like that. We could hear them some nights after we got back from the parks having a good time. You also have the walk to get your drinks in the refillable mugs. Unless you get lucky and get in a Casitas building you will be walking a fair distance just to get some soda, coffee, tea, etc.

All in all though our stays at both resorts were very enjoyable. We do not have children but if we did we would stay at POFQ due to it's smaller size and accessibility to the pool, food court, bus stop, etc.

For a child that young, it really doesn't matter. I'm going to assume that you will have a stroller for him? So walking isn't a factor for him. I doubt that a child that young will care about the theming one way or the other. Location and travelling time to the parks/DTD is a little better at POFQ. As for play areas, I think CSR would have the edge. You can check out the play facilities for each on the resort specific threads.
