Freezing ?

I have decided that THIS is the year that I will finally do all that Christmas baking I plan to do but never get around to. I've made my list of things to make, getting the recipes together, and making grocery lists. I'm very excited and plan to give lots of goodies to family which they'll love as there aren't many bakers in our family. :) Today a friend mentioned making some things ahead of time and freezing. Are there certain cookies that freeze very well and some that don't freeze well at all? Any particular guidelines to follow? Would love to be able to do some of it in late Nov. early Dec so there won't be so much to do Christmas week. Any help you can offer would be very much appreciated!
 
I always bake early and freeze cookies.
I give them as teacher gifts (with a gift certificate).
I give them to family who don't have time to bake.
They seem to be very appreciated.

Cookies that freeze well are:
peanut butter
peanut butter blossoms (with the hershey kiss)
chocolate chip
spritz cookies


I also make almond bark cookies and refrigerate them. They hold up a while and they are the simplest things to make.

Cut out sugar cookies do not freeze well for me (but it might be because I ice them). I make them right before I need them and refrigerate them until needed.

To defrost cookies: I usually defrost the day before I need them if I am wrapping them, but if you have last minute company you can take them out as needed. They may be cool but will not be hard by the time you need them.

Thanks to both of you! You mentioned some of the very cookies that I was wondering about. I am so glad to find I can do this and they will taste just as good. It will help me so much to not have to try to do it all at once as I'm planning to bake A LOT! :)

firstmickey - I was thinking of freezing sugar cookies as well but I was planning to bake them then freeze and take out a day before I wanted to decorate with frosting. Do you think that might work better? Peanut Blossoms are DH's favorite so now I'll be able to make a lot and keep them - that info is so helpful!
