Free Dining Dilemma

(I apologize in advance for the length)
So, I'm in a dilemma with my trip coming up in September. It is with me and my sister; I am paying the entire room cost, she is paying for her tickets and food.

The initial plan was to go with POR with free dining and 8-day Park Hoppers. But when the deal came out the cheapest room available was River View which wasn't worth it to me. I booked a room but was still looking for cheaper rooms.

When Room-Only discounts came out, there was a 20% off for POFQ, which worked out to be a better deal than the POR-FD. So I had booked that one. Because it was room-only, we were going to get my sister's ticket from UT. And because I already had a Signature DLR AP, once we considered discounts and free Memory Maker, it made sense to upgrade to a Premier AP. We also decided not to get Dining Plan with that because it wouldn't have saved us money.

This weekend I decided to bite the bullet and commit to one of the bookings. I went with POFQ. I also went to DLR and upgraded to the Premier pass.

NOW, this morning, they released more rooms for FD. Including a pool view for POR which does make financial sense! In theory, it would have saved me about $300 over the POFQ booking, even including upgrading to the DDP from QSDP. I would have used that ticket to upgrade to a Premier AP so we still would have had merchandise discounts and free MM. BUT, because I already did the upgrade, the ticket I would need to get for the FD booking would just be sitting in my account. For tickets I would need to either get another 8-day PH to match my sister or two shorter length tickets, which would both be sitting collecting dust (I know my sister could always upgrade a shorter length ticket but that would mean we couldn't get 60-day FPs for every day we will be at the parks).

So, now I have 2 options:
1) Stick with POFQ. Still get the UT ticket for my sister. Still pay for food OOP (w/AP discount where applicable). Total cost to me (minus AP): approx $2520. Total cost to sister: $1060.
2) Switch to POR with FD and upgrade to DDP. Buy an 8-day from UT for my sister. Meanwhile get 2 spare 4-day PHs with the FD deal (I would want the ability to get advance FPs for each park; probably the nearest time I would return would be at Christmas 2018 and I don't know who (if anyone) would accompany me; I would most likely end up with the value of one or more tickets just sitting in my account in the future). Total cost to me: Now-$2270, Future Ticket Value-$950, Total: $3220; Total cost to my sister: $690.

So, is it worth the extra $700 now to have $950 in ticket value in my account? I don't know when my next trip would be.

Argh, I just wish that a) the extra rooms have been available last week, or b) I hadn't insisted on upgrading my AP this weekend!

Can you afford the $2270?
Can you think of any other place you could invest $700 now for a guaranteed profit of at least (don't forget likely ticket price increase before 12/2018) $250 in 17 months?
Will you benefit from the Dining Plan?

I don't understand why you would need 4-day PH with the FD deal? If you have an AP and your sister has an 8-day ticket from UT, you can simply link those to MDE and make the FP+ you need for the trip. If you go with the FD deal, why not just buy the minimum tickets needed for the promo (2-day PH tickets) and use the AP and UT ticket to make your FP+ reservations? It may also be cheaper to simply purchase 8-day PH's with the FD promo and not buy the separate UT ticket. That way your sister can use the 8-day ticket purchased with the FD deal and you can save the other 8-day ticket for another time.

So the reason for the 4-day PH was thinking about when I would use it in the future. I would probably want to get enough so I could pre-book FPs in all 4 parks; if I only got the 2-day then I would only have 2-days of FPs to prebook. I know I could upgrade them but that appears to only be at the park when you arrive. I wouldn't want the 8-day ticket because that means the future trip would end up needing to be that long, and I don't know if that would be something I'd be able to do again.

I finally did just decide to go with POFQ. It's just simpler and what is already set up. I've been stressing so much about this trip I need to just make a decision and accept it. And I don't want those extra tickets hanging over my head when who-knows when I would be back.

Isn't "free" dining going to cost you quite a bit more than going with a room only discount?

It would have saved about $250 if there wasn't the ticket issue.

Room cost:
POR (rack rate) - 2350; POFQ (w/20% discount) - 1785

Food cost:
POR (free QSDP w/upgrade to DDP) - $385; POFQ (OOP w/AP Discount) - $1190

Ticket cost (same for both): $1055

Totals:
POR - $3790; POFQ - $4030

But anyways, decided to just stick with RO discount...
