We will be staying for a 10 day trip at WDW using Annual Passes and staying on property at Disney resorts. When our 60 day window opens up, can we make fast passes for the entire 10 day trip or only 7 days? I've read somewhere only 7 days worth of FP+, but it was a little unclear how it was written.

You will be able to make it for the full 10 days because you are staying on site.

If you were staying off-site then you would only be allowed 7 days. There are additional complications if you have an off/on-site split stay, as the on-site days will count toward the 7-days (ie, staying 8 days on site and 3 days off site; you would be allowed the 8 days on site to make advance FPs, but the offsite FPs would need to get made once you use up some of the on-site days (so, after Day 2, you would have only 6 remaining on-site days, so you could make the first off site day’s FPs; after day 3 you could make the next off site day, and so on.))

Offsite: 7 days worth of fast passes in a 30 day window

Onsite: you can book FP's for as long as you are staying on site, so it can exceed 7 days
