FP selections for group of 6

I know that I clearly must be missing something here.... so I'm hoping someone can tell me what I'm doing wrong. We are traveling as a party of 6 under 2 reservations. I'm in charge of making all of the fast pass selections.

What I can't figure out, is how to make different fast pass selections for different people in the group. For example... at Epcot, my parents really only want to do Soarin. When I make the fast pass reservations, I choose everyone's name. Then I pick Soarin... and 2 other fast passes. Now everyone has fast passes for the same 3 rides. My parents will go unused for 2 of those rides.

At MK, my dad will go on the Speedway cars with my daughter. I would like to make a fast pass selection for them to do that... but none of the rest of us want to do that. I tried making the selection, and then going in to "modify". It seems to only let me modify the time, not change things to a different attraction.

What am I doing wrong? TIA!

A. UPDATE FP+
B. SELECT A DATE
C. CHANGE EXPERIENCE
D. CHOOSE the new experience: (Tomorrowland Speedway)
E. APPLY NEW TIME FOR (Check only the guests for whom you want the new attraction.)
F. Click UPDATE

This is what we did. My mother didn't want to ride Space Mountain or BTMR a second time, so we swapped MBs so the kids could ride it again.

I've come to the conclusion that after 6 trips in the last 8 years... I must just be too dumb to do the new way of doing Disney. When I try to follow these instructions.... I get stuck at "choose new experience". It only brings up 3 options, and I don't show any ability to scroll down to show more.

I tried to change "Peter Pan's Flight" to "Tomorrowland Speedway". The only options it gives me to change to are Small World, Buzz Lightyear, and Jungle Cruise. I find it impossible to believe that those are the only 3 rides with any fastpass availability that day. Does anyone know what I'm doing wrong? At this point... I'm thinking I'll just go to the concierge desk when we check in, admit my stupidity, and hope they can help me adjust fastpasses.
